Sweet Potato Pancakes and Chutney thats made fresh With Cranberries and Apples!! Delicious!!!
ingredients for pancakes
2 cups coarsely shredded sweet potatoes
1 cup coarsely shredded potato
1/2 cup shredded sweet onion
1 large egg
1/4 tsp salt
1/4 tsp pepper
1 tsp parsley flakes
2 tbsp flour
Chutney
12 oz pkg cranberries
1 cup water
1/2 cup cider vinegar
3/4 cup white sugar
1/2 cup raisins
1 cup diced apples
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp allspice
1/8 tsp ground cloves

Carrot Raisin Salad Recipe - Easy, Inexpensive, & Fresh Side Dish from the Garden
Here is a side dish I enjoyed growing up. I am making this using traditional ingredients but include some substitutions if you would like to change it to your liking. We will cut the carrots a couple of different ways to make it interesting!

Carrot Raisin Salad
4 1/2 Cups Carrots
1/3 Cup Raisins
1/4 Cup Sugar
1/3 Cup Mayonnaise
8 oz. Crushed Pineapple w/ Juice
2 Tablespoons Apple Cider Vinegar
1 T Lemon Juice

Another super busy day today, but I came through with flying colors and still have energy to spare! A old favorite for lunch (behold the 1 Smart Point turkey wrap!), a new favorite for snack (that 0 Smart Point butterscotch banana yogurt!) and a fake Chevy’s corn tomalito for dinner that is only 4 Smart Points! Let my 15 mile run remind you that YOU never know what your body can do until you push it!!

Here is my tweaked version for lower smart points:
1/4 c. masa
1/4 c. sugar
2 c. corn
1/2 c. cornmeal
1/2 c. water
1 tsp. baking powder
1/2 tsp. salt
4 tbsp. almond milk
Blend half the corn kernels with the water until smooth.
Mix blended corn with all other ingredients, stir together.
Microwave for 2 minutes; stir. Microwave another 2 minutes; serve.
(24 SP total, 6 servings, 4 SP per serving)

Lemon Poppy Seed Bread | Keto + Low Carb | 1.5 Net Carb per slice!
This keto lemon poppy seed bread is airy and delicious topped with some grassfed butter - perfect for breakfast on the go!
R E C I P E
4 eggs, separated
1/2 cup LIGHT olive oil (or avocado oil)
1/4 cup pyure (
1 tbsp lemon extract (
1 tsp pure vanilla extract
1/4 cup coconut flour (
1/2 cup almond flour (
1/4 cup ground flaxseed (
2 tbsp poppy seeds
1/4 tsp salt
2 tsp baking powder
Beat your egg whites until stiff peaks form. In a bowl, mix together egg yolks, sweetener, oil and extracts. Add coconut flour, almond flour, flaxseed, salt, baking powder and mix well. Add beaten egg whites and slowly mix until incorporated. Pour into 8x4 loaf pan ( and bake for 35 minutes at 350 degrees. Let cool for 5 minutes in pan - flip pan to release bread, and let cool completely before slicing. Should last in a ziplock bag at room temperature for up to 5 days.
Makes 10 servings
MACROS per serving: 185 calories, 17.6g fat, 4.7g protein, 1.5 NET carb
