PHILLY.INQUIRER:
1 lb DRIED BLACK BEANS
1 tb GROUND,CUMIN
3 qt WATER
2 tb DRIED OREGANO
2 WHOLE BAY LEAVES
2 tb FRESH OREGANO CHOPPED
OR 2 TS.DRIED 1 c OLIVE OIL,OR TO TASTE
3 SMALL SHALLOTS,PEELED DICED
2 tb FRESH PARSLEY 1,OZ.
1 SMALL ONION,PEELED DICED
1 1/2 tb SUGAR
1 LARGE RED PEPPER,CLEANED DIC
1 LARGE GREEN PEPPER DICED
4 GREEN ONIONS,FINELY CHOPPED
3 CLOVES GARLIC,MINCED
1/2 c SOUR CREAM.OPTIONAL
x 1 OR 2 TABLESPOONS SALT SOAK THE BEANS IN WATER OVERNIGHT IN A LARGE HEAVY POT.THE NEXT DAY,ADD THE BAY LEAVES THE BEANS AND WATER,AND brING MIXTURE TO A BOIL.REDUCE HEAT TO SIMMER AND COOK UNCOVERED,OVER LOW HEAT FOR THREE TO FOUR HOURS,UNTIL TENDER.THE BEANS SHOULD SPLIT OPEN.STIR OCCASIONLLY,AND ADD MORE WATER IF NECESSARY. HEAT THE OIL IN A HEAVY BOTTOMED SKILLET.ADD THE SHALLOTS AND ONIONS,AND SAUTE FOR THREE MINUTES.ADD RED PEPPER,GREEN PEPPER AND GARLIC. AND SAUTE FOR THREE MINUTES.THEN ADD CUMIN,OREGANO AND PARSLEY,AND SAUTE 3 SECONDS MORE.ADD THE SUGAR AND SALT.LET MIXTURE COOL. PUREE ALL THE SAUTED MIXTURE THROUGHLY IN A FOOD PROCESSOR OR BLENDER.ADD THE PUREE TO THE BEANS,COOK 20 TO 30 MINUTES MORE.CORRECT SEASONING IF NEEDED.THE SOUP WILL BE VERY THICK.REMOVE BAY LEAVES BEFORE SERVING.GARNISH WITH GREEN ONIONS AND A DOLLOP OF SOUR CREAM,IF DESIRED.MAKES SIX SERVINGS.

Jacques Pépin shares his recipe for pork and red beans with rice. This recipe is special, not only because it looks SO delicious, but it was also one of his late wife Gloria's favorite dishes. Jacques suggest cooking for 1 hour in the pressure cooker, but make sure to test along the way as cooking times may vary. What you'll need:
1/2 lb of red beans, 3 cups cold water, 1 1/2 tsp salt, 1/2 - 3/4 cup canned tomato, 1 1/2 lbs boneless pork ribs, 4 - 5 garlic cloves, 2 cups chopped onions, 1 leek, 1 tsp Italian seasoning, 1/2 tsp cumin, 1/4 cup cilantro stems, 1 cup peeled carrots, 2 tbsp jalapeno, 1 cup long grain rice, 2 cups water, 1/4 tsp salt, dash of tabasco, garnish with cilantro

Hope ya'll enjoy! The ingredients list is kinda long, but once you get all of your ingredients together everything else is a piece of cake! From time to time I like to experiment with different flavors to see what I can come up with. This is one of my many ways to make chili. It's so GOOD! Feel free to take out any ingredient that you don't like, this recipe is very forgiving.This chili taste BEST when served immediately after cooking.
*THIS IS A SLOW COOKER RECIPE*
Chili Recipe
Here's what I used in the video:
Power Quick Pot ( I'm using a 10 Qt)
1 Green bell pepper
3 Celery stalks
1 Yellow onion
5 Garlic cloves
2 lbs. of Ground beef (I used 80/20 lean)
2 Tsp Oregano
2 Tsp Brown sugar
2 Tsp Coriander
4 Tbsp Chili powder
3 Tbsp Ground Cumin
2 Tsp Dried Thyme
1 Tsp Smoked paprika
1/2 Tsp Dried Basil leaves
1/2 Tsp Black pepper
1/4 tsp Cayenne Pepper (to taste, gradually add more as needed)
Salt to taste ( I used 1 1/2 tsp)
1 Bay Leaf
4 Tbsp Green onions
2 16 oz Cans Kidney beans (rinsed and drained)
1/2 cup canned Black beans
1- 28 oz Can Hunts Diced tomatoes (with juices)
1- 29 oz Can Hunts Tomato sauce
1- 14.5 oz Can Swanson Chicken broth (low sodium)
2 Tsp Worcestershire sauce
*TIP - Taste as you go!!
