Ingredients:
2 Eggs
1 piece of chicken breast (268g)
Salt, black pepper, and paprika
½ Onion
30g Red bell pepper
30g Corn
15g Spinach
1/3cup All purpose flour (50g)
50g Cheddar cheese
Olive oil
Recipe:
2 eggs
Mix well
1 piece of chicken breast (268g)
Slice the chicken breast in half
Dice the chicken
Move to a bowl
Add the egg to the chicken
Salt
Black pepper
Paprika
Mix well
1/2 onion
Dice the onion
30g red bell pepper
30g corn
15g spinach
50g cheddar cheese
Mix well
1/3 cup all purpose flour
Mix well
Medium-low heat
Olive oil
Scoop some of the butter into the pan
Fry for 5 minutes
Flip each piece over
Fry for another 5 minutes
Done!

***RECIPE***
eggs (one per person, I do 2-3 in a 10 in / 25 cm pan)
milk (1/3 cup, 80mL per egg)
flour (1/3 cup, 40g per egg, and I like to replace up to half my flour with starch)
salt (a pinch per egg)
sugar (1 teaspoon per egg, sweet or savory)
vanilla (only for sweet)
spreadable cheese, like ricotta/brie/mascarpone (OPTIONAL 1 tablespoon per egg, improves the taste but makes it not puff as much)
butter
toppings (lemon juice and powdered sugar is nice for sweet, eggs/salami/onion is nice for savory)
If possible, warm the eggs and the milk before mixing. Combine the eggs, salt, sugar and vanilla (if using) in a mixing bowl and whisk until frothy. Whisk in the flour until smooth, then whisk in the milk. Or you could just dump all of that in the blender at once. Let the batter sit for at least 20 minutes before baking.
Put your pan (nonstick or cast iron) in the oven and get the oven heating to 425ºF/220ºC. When it's all the way hot, take the pan out of the oven and melt in a thick film of butter. Pour in the batter and return the pan to the oven. Bake until puffy and golden (mine took 20 minutes).
If you want to cook some eggs on top like I do in the video, bake until almost done, pull it out, put on your eggs/seasonings/onions/salami/whatever and return to the pan for a few minutes until the yolk is as firm as you want it.
Transfer to a cooling rack and let it steam out before you eat.

4 savory pancakes recipe to try right now!
1 Mashed potato pancakes
INGREDIENTS 600g potatoes 80g parmesan cheese salt pepper 1 tbsp olive oil 190g flour ham cheese METHOD 1. Boil the potatoes or cook them in the microwave for about 10 minutes. Mash the potatoes and add the flour, and the Parmesan cheese, salt and pepper. 2. Spread out the mixture on a sheet of parchment paper and cut out some circles. P 3. Place cheese and ham on one circle and then cover it with another circle. 4. Pour some olive oil in a pan and cook each pancake for 5 minutes on each side. 5. Your potato pancakes are ready to serve!
2 Salmon cakes
INGREDIENTS
1 lb fresh salmon filet Garlic Salt Black Pepper Olive Oil 1 medium onion (finely diced) 1/2 red bell pepper, diced 3 Tbsp butter 1 cup bread crumbs 8-10 black olives, finely sliced 2 large eggs (beaten) 3 Tbsp mayo 1 tsp Worcestershire sauce 1/4 cup minced fresh parsley tzatziki sauce for serving
METHOD
Preheat Oven to 425˚F. Line a baking sheet with a parchment paper and place salmon on it. Brush with olive oil and season with garlic salt and black pepper.
Bake it for 10-15 min. Remove from oven, and flake salmon with forks, remove any bones, and cool to room temp while prepping remaining ingredients.
Heat a medium skillet over medium heat. Add 1 tbsp olive oil, 1 tbsp butter and finely diced onion and bell pepper. Saute until softened and golden.
In a large bowl, mix salmon, sautéed onion and pepper, bread crumbs, eggs, mayo, black olives, Worcestershire sauce, 1 tsp garlic salt, 1/4 tsp black pepper, and fresh parsley. Stir to combine.
Form 13-14 cakes by using an ice cream scoop then pressing them into patties.
Heat 1 Tbsp oil and 1 tbsp butter in a large pan over medium heat and fry the salmon cakes until golden brown.
Serve with tzatziki sauce
3 Stuffed potatoes cakes
INGREDIENTS • 800g potatoes • 300g mushrooms • 200g flour • 50g Parmesan cheese • 100g provola cheese • 1 egg • 1 clove garlic parsley vegetable oil salt pepper METHOD
In a pan, fry the garlic with two tablespoons of oil, then add the mushrooms, salt, pepper, cover with a lid and cook for 10 minutes.
Add the parsley and cook without a lid.
Mush boiled potatoes with a fork and add parmesan, egg, salt, pepper and mix.
Put the dough on a work surface (add more flour if necessary) and roll it out with a rolling pin, then make discs with a cup or glass.
In one of the potato disks, place a spoonful of mushrooms in the center and add provola cheese, cover it with another potato disk and seal the edges. Continue until all ingredients have been consumed.
Cook in a pan with a small amount of oil for 5 minutes on each side.
4 Easy zucchini fritters
INGREDIENTS 2 zucchini salt Egg 50g of flour 40g of breadcrumbs METHOD
Cut the zucchini into slices, put them in a bowl with the salt and set aside for 3-4 hours.
Add the egg, flour and breadcrumbs with the zucchini slices and stir.
Fry the mixture in boiling oil and serve hot
