Pasta Primavera: Co+op Kitchen
Serves 4
Prep time: 10 minutes active, 25 minutes total
Ingredients
• 2 cups tomatoes, blanched, peeled and diced
• 1⁄2 tsp. salt
• 1 tsp. lemon juice
• 1 clove garlic, minced
• 1 tsp. fresh oregano, minced
• 1 Tbsp. fresh basil, minced
• 1 Tbsp. fresh parsley, minced
• 1 Tbsp. olive oil
• 1 cup broccoli florets
• 1 cup green beans, trimmed and cut into 1 pieces
• 1⁄2 cup carrots, julienned
• 1⁄2 pound dry pasta (such as macaroni, bowtie, rotini)
Preparation
1. Combine the tomatoes, garlic, herbs, lemon juice, oil and salt. Set aside.
2. Bring a medium-sized pot of salted water to a boil over high heat. Once the water boils, add the pasta and set a timer for 2 minutes less than the cooking time on the package.
3. When the timer rings, add the prepared vegetables and cook another 2 minutes. Remove the pot from the burner and drain off the hot water. Add the pasta and vegetables to the tomato sauce and season to taste with salt if needed. Add an additional splash of olive oil if the dish seems dry.
Serving Suggestion
Complement this dish with a crisp Caesar salad, garlic toast or bread sticks.

So I took all the feedback from the previous video and decided to make this video with a slight bit of changes.
FAQS:
- So, first addressing the most asked question of why in the world I added sugar? - Tomatoes are usually acidic and adding just as much 1/4 tsp sugar cuts down on the acidity and creates a lovely balanced flavour (trust me you can try skipping it and then adding it later to check)
- So much oil?!?! -- unless you plan on eating it every single day I don't see a couple tbsp of olive oil ruining your life... but I took the suggestions and cut it down a bit in this video and it still tasted just as good so yay!
- Substitutes for heavy cream? -- evaporated milk or half and half
- You burnt the garlic! -- I simply did not ????
- Gigi hadid did not invent it ???? -- very true! but you know the youtube algorithm?? I gotta title it this so it reaches more people... I am fully aware it's penne alla vodka except I didn't add vodka because I don't have it
- When to add vodka if I want to? -- Just before adding the heavy cream (about 2 tsp would be perfect for this portion!)
Ingredients:
- 1/2 cup or 50g of pasta [any pasta works but i recommend penne, rigatoni or shell which is ironic because I used farfalle in the video lol] Cook the pasta in boiling water with 1/2 tsp salt until al dante & reserve 2 tbsp water for the sauce
For the Spicy Sauce:
- 1/4 finely chopped onion
- 1/2 tbsp minced garlic
- 1.5 tbsp olive oil
- 1/4 cup heavy cream
- 2 tbsp tomato paste
- 1/2 tsp Red Chilli Flakes
- 1/4 tsp black pepper powder
- 1/2 tsp red chilli powder [you can adjust ~ this is perfect for my medium spice tolerance]
- salt as per taste
- 1/4 tsp sugar (granulated)
- 1/2 tbsp butter (i used salted) -- can skip!
- 2 tbsp Grated Mozzarella cheese -- can skip!
- 2-3 freshly chopped basil leaves -- can skip!

Buon Giorno! Let’s put the big reveal right up front: keto pasta noodles! We’re making keto pasta noodles, and they are actually GOOD! Startlingly close to regular pasta noodles, in fact.
We laid down the foundation for this recipe in Series 2, Episode 10 when we made our meaty lasagna. Today, we’re using this experience to create thin, yet flexible fettuccini noodles in a simple, light pasta sauce mixed with fresh veggies. It’s a Spring and Summer classic: Fettuccine Primavera.
The “official” Fettucine Primavera recipe was developed at New York’s famous Le Cirque Restaurant, but it has ascended to royalty among light pasta recipes, beloved for its simplicity and fresh vegetable ingredients.
If you thought our lupin flour and almond flour pasta recipe worked great for lasagna, you will love it as Fettuccine Primavera.

For the Keto Pasta Noodles, you’ll need:

To assemble the Pasta Primavera, you’ll need:
High-heat tolerant oil (we used avocado oil)
Grape tomatoes
Black pepper, freshly ground
Garlic, sliced
Olive oil
Onion (we used shallots)
Mushrooms
Bell peppers
Zucchini
Summer squash
Broccoli florets
Peas
Cooked keto pasta noodles (fettuccine)
Basil leaves, torn/crushed
Parmigiano Reggiano, finely grated
Top with a drizzle of olive oil, flakes of parmesan, chopped parsley, and salt/pepper to taste.
