You and I both know that everything is cuter is bites, so today we’re making some vegan, oil-free “Meatloaf Bites” that are so easy for serving and entertaining. You guys have been asking for finger food and potluck recipes and this is the first in our new series! We enjoyed making this lentil-based meatloaf in small muffin-sized portions because each bite has that delicious, crunchy crust, which is one of the highlights of any meat(less) loaf. 10 Ways to Use a Muffin Tin That’s Sitting In Your Cabinet | Sushi Cups, Desserts, Snacks, & more!
Meatloaf minis
Ingredients:
1/2 pounds lean ground beef (or ground turkey)
2/3 cup panko bread crumbs
1/2 cup onion , chopped
1 Tablespoon barbecue sauce
1 Tablespoon mustard
1/2 teaspoon garlic powder
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 egg , lightly beaten
Meatloaf sauce:
1/3 cup light brown sugar
1/2 cup ketchup
2 teaspoon dijon mustard
1/4 teaspoon ground nutmeg
Instructions
Preheat oven to 350 degrees F.
In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
In the meantime, in a small bowl mix together all of the ingredients for the sauce.
Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
Serve with mashed potatoes and any extra sauce.

Two easy mini meatloafs cooked in a NuWave mini oven.

Ingredients:
¼ cup diced onion,
¼ cup diced green bell pepper
1 egg
1 pound ground beef (80/20)
1/8 teaspoon black pepper
2 teaspoons garlic powder
2 tablespoons Worcestershire sauce
½ cup crushed Stove Top Stuffing (savory herbs)
Salt & Pepper tops of loafs
Topping: spicy ketchup
Bake at 275 f. in NuWave oven until internal temp. of 160 (approx. 35 minutes).
