How to make Eccles Cakes
These delightful little 'cakes' originated in the small town of Eccles, near Manchester. Eccles cakes are parcels of puff or flaky pastry enclosing a sweet mixture of currants and mixed peel.

Eccles cakes are also known as squashed fly cakes, and technically, I would call them a pie, since they are a filling completely enclosed in pastry. But whatever you call them, Eccles cakes are delicious and just a bit addictive.

ECCLES CAKE MADE WITH ORANGE PEEL | HOW ECCLES CAKES IS MADE
Eccles Cakes is actually not a cake, it's more like turnover, comes from the North of England, this cake is made from puff pastry (flaky pastry with butter) filled with currants/raisins or mixed fruits with spices and sometimes topped with demerara sugar.
Eccles Cake is a traditional British snack, that is round shape and best eaten when it's still warm, it's sweet with a shiny coating and so buttery!
In this Eccles Cake we use orange peel, and store bought puff pastry.
Here is how to make Traditional British Eccles Cake:
Prep:20 mins
Cook:15 mins
Make 8
Ingredients:
2 tablespoons butter
1 cup dried currants/raisins
2 tablespoons orange peel or chopped candied mixed fruit peel
1/4 cup brown sugar
¾ teaspoon mixed spice/pumpkin pie spice
1 package frozen ready to bake puff pastry, thawed
1 egg white, beaten
¼ cup white sugar for decoration (Optional)
Method
1. In a small saucepan over medium heat, melt butter. Stir in currants, mixed peel, demerara sugar and mixed spice. Stir until sugar is dissolved and fruit is well coated. Remove from heat.
2. Meanwhile Preheat oven to 425 degrees F (220 degrees C) Grease a baking sheet with butter.
3. On a lightly floured surface, roll out pastry and cut out 4 equal square or round on each pastry using a knife or scissors.
Divide the fruit mixture evenly between the square/circles. Moisten the edges of the pastry, pull the edges to the center and pinch to seal.
4. Brush each cake with egg white and sprinkle generously with white sugar (Optional) Make three parallel cuts across the top of each cake, then place them on the prepared baking sheet.
5. Bake in preheated oven 15 minutes or until golden.

56g buttler
56g castor sugar
Mix all together until fruit is fully covered, then put the filling in the center of the puff , fold to cover the mix, then roll out with a rolling pin or flatten with a block, tray up and rest for an hour, then wash with water or egg whites, then drop the top into sugar, then bake at 200c for around 15 mins until golden brown.
