How to Make Lentil Chili | Plant Recipes
Easy and budget friendly crockpot lentil chili recipe. This is one of Emma Ryan's favorite recipes that is perfect to make for yourself, your family, or a crowd.
What you will need for this recipe:
1 crockpot, instant pot, slow cooker, etc
1/2 of a yellow onion
1 garlic clove
1 red bell pepper (could be green, yellow, orange, whatever color you want)
1 can of black beans (any bean will work)
1 can of diced tomatoes
1 can of refried black beans
32 ounces of vegetable broth
2 teaspoons of Himalayan salt
1/2 pound of green lentils (could be black or red lentils)
2 tablespoons of chili powder
Optional: green onions, cilantro, avocado (toppings)
Cooking instructions:
Set crockpot on medium heat for 6 hours
End result:
Delicious lentil chili that serves about 6 people. Enjoy!

My favorite Lentil Chili!
My favorite lentil chili!
We make this a lot this time of year when it's chilly (see what I did there?) and yes, it has been cold here in SoCal! It's so easy to make, easy to freeze and reheat, and easy to adjust if you want to do different veggies, or add more or less spice. Ya know....if you're like me and can't handle the We often do this combo of sweet potatoes and zucchini, but you could also do chopped carrots and peppers, or other veggies that sound good to you! Enjoy!
Lentil Chili (vegan)
1 Onion peeled, chopped
2 medium sweet potatoes, peeled & chopped
2 medium zucchini chopped
1 to 2 cloves garlic, chopped6
cups vegetable broth
1 cup dry lentils, rinsed
One can crushed tomatoes (28 ounces)
One can kidney beans (15 ounces)
1 teaspoon ground cumin
1 teaspoon paprika
(Optional)
2 tablespoons chili powder
1/2 teaspoon smoked paprika
*Place chopped veggies, onion, garlic, and 1 cup veggie broth/water in a large pot over medium-high heat. Cook around 5-7 minutes or until veggies soften. Add spices and cook for another minute.
Add lentils, kidney beans, tomatoes and remaining veg broth to pot. Cover and bring pot to a boil over high heat. Reduce to a simmer, stirring until lentils soften (maybe 45 minutes). Add salt and pepper to taste.
Enjoy with a sprinkle of cheese and avocado!

Curries, stews, Chili, Dal are all season meals in my house. A hearty Chili with lentils, veggies and beans is a perfect 1 Pot meal.
This chili has veggies, quick cooking Red lentils and Kidney beans. The lentils add a great texture and also thicken the chili really well. Add whichever beans you like to make up the bulk. I like to use chipotle and ancho chilies for flavor. Use dry or canned chipotle pepper to preference.

This lentil chilli is a hearty and delicious vegetarian dish that is perfect for a cold winter evening. Made with lentils, vegetables, and a variety of spices, this chilli is both filling, nutritious and is less than 300 calories per portion.
If you follow a vegetarian diet or are simply trying to eat less meat, you’ll know that a lot of vegetarian chilli recipes just use Quorn as a mince substitute.
I’m not going to do that. Instead, we’re going to use plenty of lentils and kidney beans to boost the protein content instead.

Easy Vegetarian Chili (lentils and beans)

You can expect a hearty, satisfying, and high-protein meal that is easy to make with pantry staples and is excellent for meal prep.
Ingredients like lentils, black beans, onions, peppers, and tomatoes meld with a blend of aromatic spices such as chili powder, cumin, and smoked paprika to create a dish with robust and comforting flavors.
INGREDIENTS:
2 tablespoons olive oil
1 large onion
3 cloves garlic
1 red bell pepper
¼ teaspoon red pepper flakes or 1½ tablespoons chili powder blend, not pure chili powder. Adjust spiciness to taste.
2 teaspoons ground cumin
1½ teaspoons smoked paprika
½ teaspoon dried oregano
2 tablespoons tomato paste
2 bay leaves
1 cup (200 grams) of dried lentils green or brown
2 cans (15 ounces each) (460 grams) of beans or 3 cups of cooked beans. We use 1 can of black beans and 1 can of kidney beans
2 cans (15 ounces each) (800 grams) crushed tomatoes
4 cups (1 liter) vegetable broth or more as needed to fully cook the lentils
1 teaspoon salt or more to taste
2 twists of black pepper
SERVES WELL WITH
2 limes, the juice
1¼ cups (240 grams) brown rice or tortilla
quick pickled red onions or pickled jalapeños
vegan sour cream, regular sour cream, or Greek yogurt
