Serves 4-5
Recipe in English:
Ingredients:
-Mutton mix boti 750g
-Namak (Salt) 1 tsp or to taste
-Adrak lehsan (Ginger garlic) crushed 2 tbs
-Water 3-4 Cups
-Sabut dhania (Coriander seeds) 1 tbs
-Zeera (Cumin seeds) 1 tbs
-Laung (Cloves) 3-4
-Sabut kali mirch (Black peppercorns) 13-15
-Badi elaichi (Black cardamom) 2
-Sabut lal mirch (Button red chillies) 6-8
-Namak (Salt) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs
-Haldi powder (Turmeric powder) 1 tsp
-Cooking oil ¾ Cup
-Pyaz (Onion) sliced 2 large
-Adrak lehsan (Ginger garlic) crushed 2 tbs
-Hari mirch (Green chilli) paste 2 tbs
-Tamatar (Tomatoes) 500g
-Hari mirch (Green chillies) 4-5
-Adrak (Ginger) julienne 1-inch piece
-Koyla (Charcoal) for smoke
Directions:
-In a wok,add mutton,salt,ginger garlic,water,mix well & bring it to boil,cover & cook on low flame until tender (30 minutes) & cook until 1 Cup stock is left.
-In a frying pan,add coriander seeds,cumin seeds,cloves,black peppercorns,black cardamom & dry roast on low flame until fragrant (1-2 minutes).
-Add button red chillies & dry roast for 1-2 minutes.
-Let it cool.
-In grinder,add roasted & grind coarsely.
-Add salt,Kashmiri red chilli powder,turmeric powder & mix well.Karahi spice mix is ready!
-In a wok,add cooking oil,onion & fry for 2-3 minutes.
-Add ginger garlic crushed,green chilli paste,mix well & cook for 1-2 minutes.
-Add tomatoes,mix well & cook for a minute,cover & cook on low flame until tomatoes are soft (4-5 minutes) then mix well & cook on high flame until oil separates.
-Add cooked mutton with stock,mix well & cook on medium flame for 2-3 minutes.
-Add prepared karahi spice mix,mix well & cook on high flame until oil separates (2-3 minutes).
-Add green chillies & mix well.
-Add ginger.
-Give coal smoke for 2 minutes & serve!

-Adrak (Ginger) julienne 1-inch piece
-Koyla (Charcoal) for smoke
Directions:
-Karahi mein mutton,namak,adrak lehsan aur pani dal ker ache tarhan mix karein aur ubal aay ka bad dhak dein aur halki ancch per gosht hul janay tak paka lein (30 minutes) & 1 Cup yakhni reh janay tak paka lein.
-Frying pan mein sabut dhania,zeera,laung,sabut kali mirch aur badi elaichi dal dein aur halki ancch per khushbu anay tak dry roast ker lein (1-2 minutes).
-Sabut lal mirch dal ker 1-2 minutes kliya dry roast karein.
-Thanda ker lein.
-Grinder mein roasted spices dal ker coarsely grind ker lein.
-Namak,Kashmiri lal mirch powder aur haldi powder dal ker ache tarhan mix karein.Karahi spice mix tayyar hai.
-Karahi mein cooking oil aur pyaz dal dein aur 2-3 minutes kliya fry ker lein.
-Adrak lehsan crushed aur hari mirch paste dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Tamatar dal ker ache tarhan mix karein aur ek minute kliya paka lein aur dhak ker halki ancch per tamatar naram ho janay tak paka lein (4-5 minutes) phir ache tarhan mix karein aur tez ancch per oil alag ho janay tak paka lein.
-Cooked mutton yakhni ka saath dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Tayyar karahi spice mix dal ker ache tarhan mix karein aur tez ancch per oil alag ho janay tak paka lein (2-3 minutes).
-Hari mirchien dal ker ache tarhan mix karein.
-Adrak dal dein.
-2 minute kliya koyla ka dhuwan dein & serve karein!

-Oil ¼ Cup
-Zeera (Cumin seeds) 2 tsp
-Laung (Cloves) 3
-Darchini (Cinnamon stick) 1
-Pyaz (Onion) chopped 1 large
-Lehsan paste (Garlic paste) 1 tbs
-Tamatar (Tomato) chopped 1 large
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Hari mirch (Green chilies) chopped 2-3
-Chana daal (Split bengal gram) 1 & ½ Cups (soaked & boiled)
-Pani (Water) ½ Cup or as required
-Garam masala powder 1 tsp
Tadka:
-Oil ¼ Cup
-Curry pata (Curry leaves) 9-10
-Kashmiri lal mirch (Kashmiri red chili) powder ½ tsp
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
Directions:
-In pot,add oil,cumin seeds,cloves,cinnamon stick and mix.
-Add onion and fry until light golden.
-Add garlic paste and mix well.
-Add tomato and mix well.
-Add red chili powder,salt,coriander powder,turmeric powder and mix well.
-Add green chilies and mix well,cover and cook on low flame until tomatoes are soft.
-Add boiled split bengal gram and mix well.
-Add water,mix well and cook for 2-3 minutes.
-Add garam masala powder,cover and cook on low flame for 8-10 minutes then mix well & set aside.
For Tadka:
-In small frying pan,add oil and heat it,add curry leaves and mix.
-Turn off the flame,add Kashmiri red chili powder and mix well.
-Add tadka on cooked split Bengal gram.
-Add fresh coriander,ginger & serve!

-Boiled chana daal shamil karein aur ache tarha mix ker lein.
-Pani dal ker mix karein aur 2-3 minutes kliya paka lein.
-Garam masala powder dal ker dhak dein aur halki ancch per 8-10 minutes kliya paka lein phir ache tarhan mix karein & side per rakh dein.
For Tadka:
-Chotay frying pan mein oil dal ker garam karein aur curry pata dal ker mix ker lein.
-Chulha bund ker dein aur Kashmiri lal mirch powder dal ker ache tarhan mix ker lein.
-Tadka ko cooked chana daal per dal dein.
-Hara dhania aur adrak dal ker serve karein.
