How To make Crispy Oven Fried Parmesan Chicken
4 chicken breast halves (6 ounces each)
with skin
and bone 4 teaspoons margarine
1 clove garlic
1 1/2 ounces corn flakes
1 tablespoon grated Parmesan cheese
1/8 teaspoon ground red pepper
1/4 teaspoon freshly ground black pepper :

1. Remove the skin and all visible fat from the chicken. (I used boneless skinless chicken breast halves.GS) Preheat the oven to 400 oF. 2. In a small nonstick skillet over medium heat, warm the margarine and garlic; cook until the margarine is melted and the garlic is fragrant. (I was out of garlic cloves -sob, sob- so I used a good sprinkling of garlic powder. GS) 3. In a heavy-duty plastic bag, with a rolling pin, crush the corn flakes to form fine crumbs. In a medium-sized shallow bowl, combine the corn flake crumbs, Parmesan and peppers. 4. Brush the tops of the chicken breast halves with the garlic-margarine mixture. Sprinkle the corn flake crumbs evenly on the chicken and gently press the mixture into the chicken to make sure it sticks. 5. Place the chicken bone-side down on a nonstick baking pan and bake for 35 to 40 minutes or until the coating is golden brown and the chicken is cooked through.
Cooking Tips: Do-Ahead Steps: The coating mixture (step 3) can be combined in advance.
Serving size: 1 chicken breast half.

Here I'll show you the secrets to getting extra crispy chicken tenders in the oven. Easy to make and bursting with flavour, these breaded chicken tenders are the ultimate finger food! Makes approx 16 tenders (depending on size) so serving is approx 4 people. Chris x

Crispy Baked Chicken Tenders | Serves 4
????INGREDIENTS????
1.3lb / 600g Chicken Tenders OR Chicken Breast, sliced into strips & at room temp (see notes)
1/3 cup / 70g Flour
1 1/4 cups / 75g Panko Breadcrumbs (see notes)
1 heaped tbsp Butter
1oz / 30g freshly grated Parmesan (see notes)
1 Egg, beaten
2 tbsp Milk
1 tsp Paprika
1 tsp Salt
1/4 tsp each: Onion Powder, Garlic Powder, Black Pepper
1/8 tsp Cayenne Pepper, or to taste
Oil Spray

Melt 1 heaped tbsp butter into a frying pan over medium heat and stir in 1.25cups/75g Panko breadcrumbs. Continue frying for 5 or so mins until the breadcrumbs turn light golden. Remove from heat.
Pre heat oven to 200c/390f.
In a small bowl combine 1 tsp paprika and salt, 1/4 tsp onion powder, garlic powder, black pepper, and 1/8 tsp cayenne pepper (or to taste).
Line up 3 large bowls. In the first bowl combine 1/3cup/70g flour with 1 tsp of your spice mix. In the second combine 1 beaten egg with 2 tbsp milk. In the third combine breadcrumbs with 1oz/30g parmesan and the rest of your spice mix.
One by one dip your tenders first into the flour, then into the egg and finally into the breadcrumbs, ensuring you fully coat at each stage (especially the last).
Place on a baking tray (preferably elevated on a wire rack if you have one), spray with oil then pop in the oven for 20mins or until golden, crispy and piping hot through the centre. If at all you notice them starting to char at all, turn down the heat.
Place on a cooling rack for a few mins to allow all the steam to escape and crisp up. Serve with your favourite dip!

Crispy Chicken Wings Ingredients:
2.2 lbs (1 kg) chicken wings
2 level tbsp aluminium-free baking powder (It has to be baking powder NOT baking soda - see further notes on baking powder below
½ tsp salt make sure it's regular table salt
½ tsp pepper
Instructions
1. Preheat the oven to 120C/250F and place a rack on a large baking tray.
2. Cut each wing at the joint so you have a mini wing and a drumette.
3. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine. Note - it's important to dry the wings first so they only get a light coating.
4. Place in a single layer on the rack, skin side up. It's fine for them to be touching. Discard any remaining coating once tossed together.
5. Place on the lower shelf of the oven for 30 minutes.
6. After 30 minutes, turn the oven up to 220C/425F and rotate the tray for even cooking. Cook for a further 45-50 minutes until the wings are lightly golden and crispy.
7. Take out of the oven to cool slightly before serving.

Oven Baked Panko Crusted Chicken
4 - chicken breast
1 1/12 cup sour cream
2 tablespoons lemon juice
1-2 teaspoons Frank's Red Hot
1 garlic clove smashed
1 teaspoon paprika
1 teaspoon salt
1 teaspoon seasoned salt
2 cups Panko bread crumbs
1/2 cup melted butter
Preheat oven to 350º
Combine sour cream, lemon juice, Frank's Red Hot, garlic, paprika, salt and seasoned salt in a glass dish.
Place Panko bread crumbs in another glass dish.
Dredge each chicken breast through the sour cream mixture first, then the Panko, coating thoroughly.
Spread the chicken out in a greased, 3 qt. baking dish.
Pour butter over the chicken and bake at 350º for 45 to 55 minutes.
