Simply Easy Bread
The amount of water you use will determine the amount of yeast you will need.
At home I just eyeball the amount of water in my bowl and add the yeast so don’t get obsessed with exact amounts. The only thing I really measure in my recipe is the yeast just because it is easy for me to get it out of the jar with the measuring spoon.
So my rule of thumb is a a Tablespoon of yeast for every 2 cups of water.
1-2 cups of water = 1 Tablespoon of yeast
3-4 cups of water = 2 Tablespoons of yeast
In a large bowl put your warm water
Add:
Salt:
You will need salt = I put about a nickel size amount in the palm of my hand for the 1-2 cup recipe. You will need a pinch more for a larger recipe.
Fat/oil: Butter, Olive oil, Coconut oil,
Here you can use an oil or fat of your choice/ for me it is usually what I have on hand.
Here I just guess.... I would say about 1/3 cup give or take.
Top Secret Ingredient: Yogurt
The best is plan, but in a pinch I have used, peach, strawberry and just what ever happen to be in my refrigerator. And it worked just fine.
You want to add a generous blob and even a little extra won’t hurt a thing.
Sugar: This can be honey, molasses, maple syrup, or just plain sugar brown sugar.
You don’t need a lot I would guess maybe a Tablespoon if you want your dough a little sweeter you can add more like maybe 1/4 cup.
Note of my failure: I have tried using Monk-fruit sweetener three different times now and my yeast does not like it and would not proof.
Egg: This is optional but it really does help to make your bread wonderful.

*Now you want to check the temp of your water. It should be just warm.
Now add your yeast. Mix and let proof should have nice bubbles in 5-15 min. But if not.....(DON’T toss it out yet!). Chances are your water was still to warm when you put the yeast in. Soooo is all you need to do is add 1 more tablespoon of yeast and let it set another 5-10 min, and it should proof. If not... you haven’t failed yet! It was probably the yeast. Your yeast might be old and the yeast’s get up and go has got up and went. Just go buy some new yeast.
(Note: I like to keep my yeast in the refrigerator if I am not using it regularly. Just remember to take it out the day before so it can come to room temperature.)
Now you can add your flour to your proofed liquid. Failure is out of the equation now, because the yeast has already let you know it is ready to go to work!
Flour add a cup or two at a time to start with and mix until blinded, remember the mixing is helping you build your gluten. Continue adding flour and mixing until you have a firm ball of dough in your bowl... pretty much you can’t mix it by hand anymore. The dough will be sticky but not wet. Lightly flour your board and start to need, this is where you want to get by with as little flour as possible. The flour at this point is pretty much just to keep it from sticking to the board and your hands. (In the video there was way more flour out on the board then what I normally work with but my grandson thought Nanna needed more flour). Your dough is done when you poke it with your finger and the indentation pops back out. Remember you can put to much flour and your bread with be dry. Your dough is now ready for the first rising should feel soft and supple.
Oil your bowl (generally) and put the dough in and coat the dough, cover with plastic wrap. Let rise to double the size (about an hour).
Dump the dough out on a lightly floured board and need the air (bubbles) out.
Now be adventurous: from your lovely dough you can make bread loaves, rolls, sweet rolls, focaccia, pizza crust...
If you would like to add herbs to your bread, knead it in at your second kneading, you can also add nuts, dried fruit, cheese.... I am telling you the possibility are endless.

Ingredients:
milk - 200 ml (6.76 fl oz)
flour - 500 g (17.64 oz)
sugar - 10 g (0.35 oz)
salt - 5 g (0.18 oz)
yeast - 10 g (0.35 oz)
eggs - 1 piece
oil - 30 ml (1 fl oz)
TO LEAVEN 30 minutes
tomato sauce - 50 ml (⅕ cup)
hard cheese - 100 g (3.5 oz)
salami - 100 g (3.5 oz)
poppy seeds - 10 g (0.35 oz)
eggs - 1 piece
IN THE OVEN 180 °C (356 °F)/30 minutes
Tray size 35 X 40 cm (14 x 16 in)
for the sauce:
cucumbers - 1 piece
salt - 10 g (0.35 oz)
Greek yogurt - 200 g (7 oz)
lemon juice - 10 ml (0.34 fl oz)
garlic - 3 cloves
thyme - 4 g (0.14 oz)
dill - 20 g (0.7 oz)
oil - 10 ml (0.34 fl oz)
