Cranberry Orange Glazed Kurobuta Ham - Kamado Joe

In this video I show how to cook a Cranberry Orange Glazed ham that I got from Snake River Farms. This is a Kurobuta 100% Berkshire Ham. I cooked this on my Big Joe from Kamado Joe, but you can do the same thing in your oven and get great results.
Preheat grill or oven to 325F and heat ham until the internal temp is 140F. Remember most hams are already cooked and could be eaten cold, but who wants cold ham?
After about 1 hour of cooking, begin applying glaze. Repeat that application of the glaze every 20 minutes until the ham is done.
After the ham has reached the internal temperature of 140F, remove and place on a cutting board. Lightly wrap with Aluminum Foil and rest for 20 minutes....
The Ingredients are:
1 Ham 8-10 Pounds
1 1/2 cup Orange Juice
1 Orange Zest
1/2 cup Brown Sugar
1/2 cup Orange Marmalade
1 can Cranberry Sauce
1 cup Cranberry whole
1/2 tsp cinnamon
1/2 tsp allspice
Reduce the glaze until it thickens....

20 oz canned Pineapple Slices (keep the pineapple juice)
1/4 cup Honey

1 tbsp. Cornstarch
1 tbsp. Water
10-12 lb. fully cooked Ham

Pineapple Maple Glazed Ham /Holiday Ham Recipe

Pineapple Maple Glazed Ham
3 kg bone-in Ham
398 ml sliced pineapple can
1/2 cup pineapple juice or juice from sliced pineapple can
1/3 cup pure maple syrup
1/4 cup apple cider vinegar
1 tbsp dijon mustard
2 tbsp Worcestershire sauce
1/2 cup brown sugar packed
A pinch of ground nutmeg
2 tbsp whole cloves
2 cloves garlic smashed
For garnish:
pineapple slices
Cranberries or cherries
Fresh Parsley
Method
Preheat oven to 325°F. Place the ham cut side down in a large roasting pan. Drizzle the Worcestershire sauce on the ham. Rub the ham with brown sugar with a pinch of ground nutmeg.
In a small bowl, add the pineapple juice, apple cider vinegar, maple syrup, and dijon mustard. Mix until blended. Pour the mixture into the baking pan around the ham.
Score the ham
It depends on how much fat you want to remove. Score the ham on a fatty part.
Cut slits crossing pattern about 1/4 inch deep. Insert a piece of the whole clove in each slit. Add the rest of the whole cloves and smashed garlic to the pan with the pineapple mixture.
Cover with aluminum foil. Roast in a preheated oven for 2 1/2 hours at 325°F (about 20 minutes/lb). Remove from the oven and remove the aluminum foil. Transfer the ham to a plate.
To make the pineapple maple glaze
In a saucepan with the strainer, pour the juices from the pan. On medium-high heat simmer the juice until thickened.
Return the ham to the roasting pan. Lay the sliced pineapple on the ham and place the cranberry in the middle of each pineapple ring. Secure them with wooden toothpicks.
Return to the oven and roast for 10 to 12/minutes at 400°F uncovered. Remove from the oven, cover with aluminum foil and let it rest for 30 minutes.
Transfer the ham to a serving plate and generously baste the ham and fruit with the pineapple maple glaze.
Garnish with fresh parsley and cranberries.
Slice and serve.

This easy baked ham is tender, moist and delicious inside while the outside is brushed with an apricot honey glaze and caramelized for a hint of sweetness.

HONEY GLAZED HAM INGREDIENTS:
►10-12 lb fully cooked bone-in ham, spiral cut
►1/2 cup apricot preserves
►1/4 cup honey
►1/4 cup brown sugar
►1/4 cup dijon mustard
►3 Tbsp unsalted butter
GLAZED HAM COOKING CHART:
►Bake at 325˚F for 10-11 minutes per pound (2 hours for 11.5 lb ham), until reaches 110˚F
►Glaze and Bake at 425˚F for 10 min
►Glaze and Bake at 425˚F for 10 minutes or until internal temperature reaches 130-135˚F.
►Transfer, tent with foil and rest (should get to 140˚F after resting 3 minutes).

INGREDIENTS
- 6-8 lb bone-in ham
For the glaze:
- 1/3 cup unsalted butter
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 1/4 tsp cloves
- 1/2 tsp cinnamon
- 1 tsp dried garlic granules
For the cranberry chutney:
- 12 oz fresh or frozen cranberries
- 1/2 cup chopped dried apricots
- 1 pear, diced
- 1/2 cup cranberry juice
- 1/2 cup apple cider vinegar
- 3/4 cup maple syrup
- 2 tbsp brown sugar
- 2 cinnamon sticks
- 1/4 tsp cloves
- 1/2 tsp salt
INSTRUCTIONS
Preheat oven to 325°F. Remove ham from the refrigerator 1 ½ hours before baking to take the chill off. Place the ham in a roasting pan (cut side down, if using a partial ham). Pour ⅓ cup water into the bottom of the roasting pan and cover tightly with foil. Place in oven to roast. While the ham is roasting, prepare the glaze and chutney.
For the glaze: In a small saucepan, combine the butter, honey, mustard, cloves, cinnamon, and garlic. Melt and stir together over low heat.
For the chutney: In a 3-quart saucepan, combine the cranberries, apricots, pear, cranberry juice, apple cider vinegar, maple syrup, brown sugar, cinnamon sticks, cloves, and salt. Bring to a boil, cover, and reduce to a simmer until thickened, 25-30 minutes.
When the ham is close to 120°F, remove foil and begin glazing every 10-15 minutes until a crust starts to form and the ham reaches 140°F, 30-40 minutes. In the last few minutes, turn the broiler on to create a deeper crust.
When the ham reaches 140°F, remove from oven and let ham rest for 15 minutes before serving.
