Sancocho - National Dish of Panama (Day 38 / 195)
Chef Milanes ( has so much detail to tell me about this dish and even though I couldn't find the exact Panamanian ingredients needed it was so delicious.
Recipe:
1 Hen (or Chicken), broken down into pieces
500g aji dulce (or mini sweet peppers), roughly chopped
6 cloves of garlic, minced
2 tbsp dried oregano
1 Otoe (or cassava), cut into large chunks
1 bunch coriander, roughly chopped
1 large onion, medium dice
Add a large glug of oil to your pot. Season your chicken generously with salt and sear it in a medium-hot pan to render the fat off the chicken.
Add in the garlic, onion, coriander and peppers. Saute for 5 - 6 mins and add in half the cassava.
Add enough water to cover the chicken and bring to a simmer. Allow to simmer for 1 and a half hours.
Add the cassava and continue cooking for 20 mins until it's cooked.
Serve the soup with white rice and enjoy.

Cook: 20 min
Yield: 4 to 6 servings
Ingredients
2 tablespoons kosher salt
16 ounces spaghetti pasta
1 pound thick-cut bacon or pancetta, chopped
3 tablespoons extra-virgin olive oil
1 cup red onion, diced
1 teaspoon red chili flakes
3 tablespoons garlic, minced
2 cups Roma tomatoes, diced
1/4 cup red wine
4 tablespoons basil, chiffonade
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper
