How To make Coffee Toffee Pie
PAStrY SHELL:
1/2 package Piecrust mix
1/4 cup Light brown sugar packed
3/4 cup Walnuts :
finely chopped
1 Unsweetened chocolate square grated
1 teaspoon Vanilla
:
FILLING 1/2 cup Unsalted butter :
soft
3/4 cup Sugar
1 Unsweetened chocolate square melted and
cooled 2 teaspoons Powdered instant coffee
2 Eggs
:
TOPPING 2 cups Whipping cream
2 tablespoons Instant coffee :
try using
espresso powder 1/2 cup Confectioners' sugar
Chocolate curls
Make pastry shell: in medium bowl, combine piecrust mix with brown sugar, walnuts and grated chocolate. Add 1 tbsp. water and the vanilla. Using fork, mix until well blended. Turn into well buttered 9" pie plate; press firmly against bottom and sides of pie plate. Bake 15 minutes. Cool on wire rack. Make filling: in small bowl, with electric mixer at medium speed, beat the butter until it is creamy. Gradually add granulated sugar, beating until light. Blend in cool melted chocolate and 2 teaspoons instant coffee. Add 1 egg, beat 5 minutes. Add second egg, beat 5 minutes longer. Turn filling into baked pie shell. Refrigerate the pie, covered at least 8 hours, but best held overnight. Topping: Next day make topping. In large bowl, combine cream with 2 tbsp instant coffee and the confectioners' sugar. Cover and refrigerate 1 hour. Beat the cream mixture until stiff. Decorate pie with topping using pastry bag with star or shell decorating tip, if desired. Garnish with chocolate curls. Refrigerate at least 2 hours.

Η ονομασία του Banoffee προκύπτει από τις λέξεις banana και toffee (καραμέλα βουτύρου)
Η αρχική του συνταγή κρατά τις ρίζες της στην Αμερική, περιλαμβάνει καφέ και καραμέλα βουτύρου και ονομάζεται Blum's Coffee Toffee Pie.
Στο Sussex της Αγγλίας δύο φίλοι το 1971 αποφάσισαν να δημιουργήσουν μια διαφορετική προσέγγιση αυτού του γλυκού και μετά από πολλές δοκιμές με διάφορα φρούτα καταλήξανε σε αυτήν με τις μπανάνες.
Μια δική μου πρόταση γεφυρώνει τις δύο αυτές συνταγές δημιουργώντας μια παραλλαγή που ονόμασα BanCoffee.
Η ονομασία βέβαια δεν περιγράφει τα υλικά όπως στην αρχική, γιατί δεν χρησιμοποίησα μπανάνες, αλλά μου άρεσε το λογοπαίγνιο. Δεν αποκλείεται να είναι αρκετά ευχάριστο και με μπανάνες αλλά αφήνω σε εσάς την δοκιμή!
Για την βάση θα χρειαστείτε
250 γρ Digestive
50 γρ Βούτυρο
50 γρ espresso (χρησιμοποίησα 2 συμβατές κάψουλες)
Για την γέμιση θα χρειαστείτε
800 γρ ζαχαρούχο (2 συσκευασίες)
100 γρ espresso (χρησιμοποίησα 8 συμβατές κάψουλες)
3 γρ ζελατίνη σε σκόνη
Πάνω από την γέμιση 150 γρ χοντροκομμένα αμύγδαλα
Για την επικάλυψη
330 ml κρέμα γάλακτος 35% λιπαρά
50 γρ άχνη ζάχαρη
Για το ντεκόρ
αμύγδαλα και ξύσμα κουβερτούρας

Recipe in English:
Ingredients:
-Candi original caramelized biscuits 2 & ½ Family packs
Prepare Coffee Syrup:
-Doodh (Milk) hot 1 Cup
-Condensed milk 2-3 tbs
-Instant coffee 1 tbs
Prepare Candi Coffee Custard:
-Doodh (Milk) 1 litre
-Sugar ½ Cup or to taste
-Dairy cream ½ Cup
-Instant coffee 1 & ½ tbs
-Doodh (Milk) ¼ Cup
-Custard powder vanilla flavor 4 tbs
Assembling:
-Chocolate syrup
-Akhrot (Walnuts) roughly chopped
-Whipped cream
-Candi original caramelized biscuits crushed
-Chocolate syrup
-Whipped cream
-Candi original caramelized biscuits
Directions:
-In a processor,add candi biscuits & crush biscuits in processor & set aside.
Prepare Coffee Syrup:
-In a jug,add milk,condensed milk,instant coffee,whisk well & transfer to a squeeze bottle & set aside.
Prepare Candi Coffee Custard:
-In a wok,add milk,sugar,cream & whisk well.
-Turn on the flame & cook on low flame for 3-4 minutes.
-Add 3-4 tbs of crushed candi biscuits (reserve remaining for later use),instant coffee,whisk well & bring it to boil.
-In a small bowl, add milk, cornflour & whisk well.
-Now add dissolved custard in boiled milk, whisk well & cook until custard thickens (2-3 minutes).
-Let it cool completely while whisking.
Assembling:
-In serving dish,add & spread reserved crushed candi biscuits & spread evenly.
-Pour prepared coffee syrup & let it rest for 5 minutes.
-Drizzle chocolate syrup,walnuts,prepared candi & coffee custard & chocolate syrup.
-Add & spread whipping cream & spread evenly.
-Refrigerate until chilled.
-Sprinkle crushed candi biscuit and drizzle chocolate syrup.
-Decorate with whipped cream & candi biscuits & serve!

-3-4 tbs crushed candi biscuits (reserve remaining for later use) aur instant coffee dal ker ache tarhan whisk ker lein aur ubal anay dein.
-Chotay bowl mein doodh aur cornflour dal ker ache tarhan whisk ker lein.
-Ab dissolved cornflour ko boiled doodh mein dal ker ache tarhan whisk ker lein aur custard garha ho janay tak paka lein (2-3 minutes).
-Whisk kertay hoye thanda ker lein.
Assembling:
-Serving dish mein reserved crushed candi biscuits dal ker evenly pheela lein.
-Tayyar coffee syrup dal dein aur 5 minutes kliya rest dein.
-Chocolate syrup,akhrot aur tayyar candi & coffee custard aur chocolate syrup dal dein.
-Whipped cream dal ker evenly spread ker lein.
-Thanda ho janay tak refrigerator mein rakh dein.
-Crushed candi biscuit sprinkle karein aur chocolate syrup ko drizzle ker lein.
-Whipped cream & candi biscuits sa decorate ker ka serve karein.
