How To make Coffee Toffee Torte
1 pk Angel food cake mix
1 pk Chocolate pudding; sm
-instant 1 1/2 tb Instant coffee
6 Toffee candy bars, 3/4 oz;
-ea 1 c Cream; whipped
Recipe by: CHRIS HANDY Prepare cake according to pkg. and bake in a 10 inch tube pan. Cool thoroughly. Prepare pudding according to pkg, using only 1 1/3 cups milk and add the instant coffee. Chill pudding 10 min. Split cake into 3 layers. Break toffee bars (I use Heath bars and I chill them overnight) into small bits. ( I put them in a plastic bag and hit them with a meat malet). Fold half of the whipped cream into the pudding. Spread half this mixture between the layers and sprinkle each layer with some toffee bits. For the frosting fold remaining whipped cream into the remaining filling mixture. Frost the cake and sprinkle sides and top of cake with the toffee bits. Chill until ready to serve. -----

Toffee coffee mix.
Ingredients:
1/2 cup instant coffee
1 cup instant non-fat dry milk powder
1/2 cup powdered coffee creamer
1/2 cup brown sugar
1 teaspoon dry fat-free butter flakes. like Butter Buds (optional. but good)
Pinch salt
Direction:
1/4 cup store-bought butterscotch flavored instant pudding mix (optional. but good)
Measure all of the ingredients into a clean. dry bowl. Use a fork to combine everything evenly.
If you are ambitious. you can powder everything in a blender. Transfer the mixture to a
reseal able container. or a pretty jar. Makes 2 1/2 cups.
This recipe has a creamy. caramel. toffee flavor. It reminds me of hot chocolate. only with a
toffee flavor instead of a chocolaty flavor. Did that make sense? It's smooth. creamy fullness is
similar to hot chocolate. only with a caramel note instead of a chocolate blast. Hmmm. not much better. Okay. I'll try again later. maybe all of the brain cells will be working then.
To Prepare: Combine 3/4 cup of boiling water and 3 tablespoons of the dry mix in a coffee cup.

Caramel Mousse Cake. Caramel Mirror Glaze
Hi, this time I willl make a caramel cake with a brownie base and caramel mirror glaze. You can find the recipe below
1. Brownie
100g dark chocolate
30g unsalted butter
1 egg
30g sugar
a pinch of salt
1 tsp vanilla extract (5ml)
30g cake flour (you can use all purpose flour)
1/2 tsp baking powder
bake the cake at 180C for 20 - 22 minutes
about 50ml espresso to moist the cake
2. Salted caramel layer with nuts
30g sugar
1 tbsp water
75ml heavy cream
1/4 tsp salt
1/2 tsp vanilla extract
1 gelatine leaf (1.5g), bloomed in cold water for about 10 minutes
25g nuts (roasted and chopped)
3. White chocolate mousse
2 egg yolks
20g sugar
1tsp vanilla
50ml milk
50ml heavy cream
bring it to 80C over small medium heat, stir constantly
5g gelatine leaves (bloomed)
sift the mixture over 30g white chocolate
200ml heavy cream
15g powdered sugar
Freeze the mousse cake for at least 3 hours
4. Caramel mirror glaze
80g sugar
1 tbsp water
80g warm water (or 80ml)
40g condensed milk
80g glucose
3g gelatine leaves (bloomed)
60g white chocolate
Pour the glaze over freezed cold mousse cake, the glaze temperature is 27C. After pouring, put the cake back into the fridge for at least 2 hours to thaw before serving.
5. Coral tuile: attach them to the cake just before serving or they will become soft quickly
75ml warm water
30ml oil
5g powdered sugar
8g all purpose flour

Salted caramel apple cake
For the Apple mix:
2 x apples, peeled and diced
50g granulated sugar
1 tsp cinnamon
For the Cake:
360g Plain flour
200g caster sugar
4 tsp Baking powder
300ml milk, room temperature
1 tsp Vanilla extract
2 Large eggs, room temperature
110g Unsalted butter, melted
For the Glaze:
95g unsalted butter
50ml milk
315g icing sugar, sifted
50ml salted caramel sauce
Tin size 8x10”
Bake 180C/160C (fan) 40 mins or until a toothpick comes out almost clean with just a few sticky crumbs
