How To make Cliff's Pizza Topping
1 lg Bell pepper, green, chopped
1 lg Bell pepper, red, chopped
1 md Onion, chopped
1 lg Tomato, sliced into rounds
1 c Mozzarella cheese, shredded
(Use more or less to taste)
Sprinkle cheese on rolled out pizza pie (1/2 recipe of Marty's pizza dough). Tope with chopped peppers and onions, cover with round tomato slices. Sprinkle with salt and pepper. Cook for about 20 to 25 minutes on 450 degrees, or until crust is brown and cheese
melted. (I omit pizza sauce for this one. If you've never tried it... try it just once, you might be surprised how good it is without sauce. Make sure the pizza is completely covered with vegetables, sometimes I use very finely chopped broccoli with this as well, and if I feel adventurous, jalapeno peppers).

Dough for 2 Scacce
6 cups flour
1 teaspoon SAF Instant Yeast
1/2 cup shortening
2 cups warm water
1 teaspoon salt
6 ounces Caciocavallo or Provolone Cheese, thinly sliced
Parsley Filling
1 bunch Italian Flat Leaf Parsley, stems removed and chopped
1 teaspoon salt
3/4 cup Extra Virgin Olive Oil
6 ounces Caciocavallo, Provolone Cheese, or scamorza thinly sliced
I did not include the cheese because I was making a vegan version of the scaccia
Basil Filling
1 1/2-2 cups Simple Tomato Sauce
1 bunch of fresh basil leaves removed from the stems and chopped
1/2 cup Extra Virgin Olive Oil
6 ounces Caciocavallo, Provolone Cheese, or scamorza thinly sliced
I did not include the cheese because I was making a vegan version of the scaccia
Simple Tomato Sauce
1/4 cup Extra Virgin Olive Oil
2 cloves garlic, chopped
14 oz jar Organic San Marzano peeled tomatoes
1 teaspoon sugar
1 teaspoon salt
6-8 fresh basil leaves

Sicilian Pizza | Kitchen on the Cliff with Giovanna Bellia LaMarca
These are two of my Sicilian pizzas. One is made with tomato, onion, and peas. The other is anchovy and onion. This pizza which is served at room temperature reminds us and our friends of the New York Philharmonic Concerts in Central Park which we joyfully attended every summer. Enjoy!
Recipe
Pizza Dough (makes 2)
6 cups all purpose flour
1 tablespoon Yeast
1/2 cup vegetable shortening
2 cups warm water
1 teaspoon salt
Pizza Condiments
Petite Peas
Anchovies
Fried Onions
1/4 cup Extra Virgin Olive Oil
6 large onions, thinly sliced
1 teaspoon salt
1/2 teaspoon dry oregano
Tomato Sauce
1/4 cup extra virgin olive oil
1 small onion, thinly sliced or 1/2 cup fried onions
28 ounce can Italian peeled plum tomatoes
1 can tomato paste
1 tablespoon sugar
salt and pepper to taste
small bunch of fresh basil leaves, rolled together and sliced
