How To make Christmas Morning Cranberry Muffins
Ingredients

cup
cranberries
1/2
cup
sugar
1 1/2
cup
flour
2
teaspoon
baking powder
1
teaspoon
salt
1/2
teaspoon
cinnamon
1/4
teaspoon
allspice
1
each
egg, beaten
1/4
teaspoon
orange rind
3/4
cup
orange juice
1/3
cup
butter or margarine, melted
1/4
cup
nuts, chopped
Directions:
Coarsely chop cranberries, sprinkle with 1/4 cup sugar & set aside.
Preheat oven to 375F, prepare pans.
Combine flour, 1/4 c sugar, baking powder, salt, cinnamon & allspice. In another bowl combine egg, orange rind & juice and melted butter. Add dry mix to wet mix & stir to moisten. Fold in cranberry mixture & nuts.
Spoon into pans & bake for 15-20 mins or until golden.
Makes 9 large muffins.

Today I’m making some flavorful Orange Cranberry Muffins. This is one of my favorite holiday dessert recipes. It’s quick to prepare and thanks to one secret ingredient, it makes moist and light muffins, bursting with orange and cranberry flavor.

ORANGE CRANBERRY MUFFINS Printable Recipe -
ORANGE JAM RECIPE -
INGREDIENTS:
200g all-purpose flour
1 tsp baking powder
¼ tsp salt
3 eggs
170g softened butter
110g sugar
125g orange jam
200g fresh cranberries
1 tbsp orange zest
TIPS FOR MAKING ORANGE CRANBERRY MUFFINS
• Make sure that all the ingredients are at room temperature before starting to make the muffin batter.
• I recommend using a kitchen scale to follow the recipe and get the right measurements.
• Don’t open the oven door before a specified amount of time, or you risk the muffins deflating.
• To check the readiness of the muffins, insert a skewer or a toothpick into the center of the muffin and if it comes out clean, they have finished baking.
• You can use store-bought or homemade orange jam.
• WHAT CRANBERRIES TO USE?
• I prefer to use fresh cranberries, but you can also use frozen cranberries or dried cranberries.
• If using frozen cranberries, don’t thaw them before adding them to the muffin batter.
• If using dried cranberries, use a little bit less than the amount listed in the recipe. It’s also recommended to soak the dried cranberries in warm water for about 10 minutes before adding them to the muffin batter.
HOW TO STORE THE ORANGE CRANBERRY MUFFINS
• Store the muffins refrigerated in an airtight container for up to 3-5 days.
• You can freeze the muffins and store them for up to 3 months.

Orange-glazed Cranberry bread is loaded with juicy cranberries with a moist and tender crumb. This stays moist for a few days after it’s made so it’s perfect as a homemade Christmas gift.

CRANBERRY BREAD INGREDIENTS:
►1 1/2 cups all-purpose flour
►1 tsp baking powder
►1/4 tsp salt
►1/4 cup milk, room temperature
►Zest of 1 large orange, divided
►1/4 cup orange juice, freshly squeezed
►6 Tbsp unsalted butter, softened
►3/4 cup granulated sugar
►2 large eggs, room temperature
►1 1/2 cups fresh cranberries
►1/2 Tbsp flour
ORANGE GLAZE INGREDIENTS:
►1 cup powdered sugar
►1 1/2 Tbsp freshly squeezed orange juice
►1 tsp orange zest, reserved from the orange above

BETH’S CRANBERRY WALNUT MUFFINS
Makes 12
INGREDIENTS:
3 eggs
½ cup (120 ml) unsalted butter, melted
1 cup (200 g) sugar
2/3 cup (160 ml) water
zest of 1 orange (about 2 tsp (10 ml))
1 ¾ cup (210 g) flour
½ tsp (2.5 ml) salt
2 tsp (10 ml) baking powder
½ tsp (2.5 ml) ground cloves
1 cup (150 g) fresh cranberries
½ cup (75 g) walnut pieces
METHOD:
Preheat oven to 400F (200C).
In a large bowl combine eggs, butter, sugar water and zest. Whisk to combine.
In a smaller bowl combine flour, salt, baking powder, cloves. Whisk to combine.
Slowly add the dry ingredients to your wet ingredients, until combined. Add cranberries mix gently until incorporated.
Place muffin papers in a muffin tin, and scoop out batter filling ¾ of the way full. CLICK HERE TO FIND TULIP PAPERS:
Then top with walnuts.
Bake for 15-17 mins until muffins have risen and are golden brown.

These moist cranberry orange muffins are my guilty pleasure which is why I stockpile cranberries in my freezer every winter! They make for a great breakfast or snack and are loaded with juicy cranberries. Hope you love them as much as I do!

Dry:
◾️2 ½ cups all-purpose flour
◾️2 tsp baking powder
◾️¼ tsp salt
Wet:
◾️½ cup unsalted butter, room temp
◾️1 ¼ cup sugar
◾️2 eggs, room temp
◾️1 whole orange juiced and zested
◾️½ cup whole milk, room temp (2% works as well)
Add 2 cups roughly chopped cranberries and bake in oven on 350 for 25-30 min
