How To make Chocolate Mini Cheesecakes
Chocolate crumb crust: =(recipe follows) 1/2 c Hershey's cocoa
1/4 c Butter or margarine; melted
24 oz Cream cheese; softened
14 oz Sweetened condensed milk
=(not evaporated milk) 3 Eggs
2 ts Vanilla extract
Chocolate glaze: = (recipe follows) Recipe by: www.hersheys.com Heat oven to 300 F. Line muffin cups (2-1/2 inches in diameter) with paper bake cups or spray with vegetable cooking spray.* Press about 1 tablespoonful CHOCOLATE CRUMB CRUST mixture onto bottom of each cup. Stir together cocoa and 1/4 cup butter. Beat cream cheese until fluffy. Beat in cocoa mixture. Gradually beat in sweetened condensed milk. Beat in eggs and vanilla. Fill muffin cups with batter. Bake 35 minutes or until set. Cool 15 minutes; remove from pan to wire rack. Cool completely. Refrigerate. Before serving, spread with CHOCOLATE GLAZE. Allow to set. Serve at room temperature. About 24 mini cheesecakes. CHOCOLATE CRUMB CRUST: In medium bowl, stir together 1-1/2 cups vanilla wafer crumbs, 6 tablespoons HERSHEY'S Cocoa, 6 tablespoons powdered sugar and 6 tablespoons melted butter or margarine. CHOCOLATE GLAZE: In medium saucepan over low heat, melt 2 cups (12-oz. pkg.) HERSHEY'S Semi-Sweet Chocolate Chips with 1 cup (1/2 pt.) whipping cream and 1 teaspoon vanilla extract. Stir until smooth. Use immediately. About 2 cups glaze. * If vegetable cooking spray is used, cool baked cheesecakes. ???? Nutella Chocolate Mini Cheesecakes Ingredients: Makes 12 Cheesecakes
* Cheesecake Crust:
1 1/2 cups Oreos or Chocolate Graham Crackers
4 tbsp Butter (melted)
* Nutella Cheesecake Filling:
14 oz Philadelphia Cream Cheese
1/2 cup Condensed Milk
1 tsp Vanilla Extract
1 cup Nutella
3 tbsp Cocoa Powder
3/4 cup Whipped Cream
* Chocolate Ganache:
1 cup Heavy Cream or Whole Milk
1 cup Semi Sweet Chocolate Chips
???? Nutella Chocolate Mini Cheesecakes Instructions:
The Chocolate Cookie Crust:
1. Using a food processor, blend Oreo or chocolate graham crackers into fine mixture. Pour into a mixing bowl and add melted butter. Mix well.
2. Divide evenly into 12 muffin liners in a muffin pan. Using a spoon, press the mixture tightly and evenly. Keep it in fridge for 15 minutes.
The Nutella Cheesecake Filling:
1. In a mixing bowl, combine cream cheese, vanilla extract and condensed milk. Using a low speed in your mixer, whisk until just creamy.
2. Add in Nutella and cocoa powder and mix.
3. Fold in whipped cream with spatula, do not over mix.
4. Using a ice cream scoop or spoon, divide the Nutella cheesecake filling evenly into prepared muffin pan.
5. In a glass bowl, add chocolate chips and hot heavy cream or milk. Top with a lid and allow to sit for 2-3 minutes. Whisk vigorously until it is smooth. Pour a small amount of ganache on top of each cheesecake. Use a spoon to even out the top or gently shake the pan.
6.. Cover and place the pan in the fridge overnight.
6. Serve the Nutella cheesecake with berries, whipped cream, chopped nuts. chocolate or as they are.
