How To make Mini Strawberry Cheesecakes
2 cups flour
1/2 cup powdered sugar
2/3 cup butter
16 ounces cream cheese
softened
1/2 cup granulated sugar
2 eggs
10 ounces frozen strawberries :
thawed and undrained
fresh strawberries -- cleaned & sliced
1. Preheat oven to 350 degrees. Mix flour and sugar. 2. Cut in butter until mix ture resembles fine crumbs. 3. Press firmly and evenly in bottom of ungreased r ectangular pan, 13 x 9 x 2 inches. 4. Bake 15 minutes. 5. Beat cream cheese in medium bowl until smooth and fluffy. 6. Beat in granulated sugar and eggs. 7. S tir in strawberries (undrained). 8. Spread cream cheese mixture over baked laye r. 9. Bake 20 to 25 minutes or just until center is set. 10. Cool completely. C over loosely and refrigerate about 4 hours or until firm. 11. Cut into about 2 x 1 1/2 inch bars. Garnish with sliced strawberries, if desired.

Mini Strawberry Cheesecakes
Here's how to make mini strawberry cheescakes!
Ingredients:
Biscuits base:
1 cup (125g) digestive biscuits or graham crackers
4 tablespoons unsweetened melted butter
Cheese filling:
16oz (500g) cream cheese
1/2 cups (100ml) sour cream
1/2 cups (100g) granulated sugar
2 eggs
2 tablespoons of flour
2 tablespoons of milk
1 teaspoon of vanilla extract
Decorate with fresh strawberries!

How to make:
Preheat oven to 325 F (160 C)
Grate your biscuits and mix them with the melted butter.
Add about 1cm (0.4in) of this mixture to your paper cups and press it down a little and set aside.
For your cheese filling, mix together the cream cheese, sour cream, sugar, eggs, flour, milk and vanilla extract.
Pour the mixture to fill the cups.
Bake for 25 minutes or until the cheesecakes are set. Remove from the oven and let them cool.
Decorate with fresh strawberries and Enjoy!

● For the cheeesecake crust:
- 80 g Digestive biscuits/graham cracker cookies ( 3 ounces)
- 30 g Melted Butter ( 2 1/2 tbsp)
