How To make Mini Strawberry Cheesecakes
2 cups flour
1/2 cup powdered sugar
2/3 cup butter
16 ounces cream cheese
softened
1/2 cup granulated sugar
2 eggs
10 ounces frozen strawberries :
thawed and undrained
fresh strawberries -- cleaned & sliced
1. Preheat oven to 350 degrees. Mix flour and sugar. 2. Cut in butter until mix ture resembles fine crumbs. 3. Press firmly and evenly in bottom of ungreased r ectangular pan, 13 x 9 x 2 inches. 4. Bake 15 minutes. 5. Beat cream cheese in medium bowl until smooth and fluffy. 6. Beat in granulated sugar and eggs. 7. S tir in strawberries (undrained). 8. Spread cream cheese mixture over baked laye r. 9. Bake 20 to 25 minutes or just until center is set. 10. Cool completely. C over loosely and refrigerate about 4 hours or until firm. 11. Cut into about 2 x 1 1/2 inch bars. Garnish with sliced strawberries, if desired.

From the biscuits crust to the lighter-than-air creamy fluffy filling with it’s delicious strawberry gel heart, everything about this strawberry cheesecake is simple incredible

For 7/8 mini cheesecakes
Tart ring 8 cm diameter
STRAWBERRY GELEE
200 g strawberry
2 tbsp sugar
1 tsp lemon juice
1 g gelatine pre-hydrated in cold water
BASE
150 g digestive Biscuits
50 g melted butter
CREAM CHEESE
350 g cream cheese
250 ml whipping cream
80 g powdered sugar
10 g powdered gelatin in 60 ml cold water (or 5g in gelatine sheets)
Freezer overnight
You can store them in the freezer as long as you want, than just take them outside the freezer 1 hour before serving.
