Chocolate Cheesecake
This amazingly delicious and easy chocolate cheesecake recipe is a perfect combination of light fluffy cream cheese and rich chocolate on an Oreo crust! It's everything you want in a chocolate cheesecake, a perfectly rich and creamy dessert that just melts in your mouth! And by the by, that CHOCOLATE whipped cream is the best thing ever, you might want to use it on every dessert you make.

BLACK FOREST CHEESECAKE | CHEF COACH
Cookie Crust:
- 1 1/2 crushed chocolate cream sandwich cookies
- 4 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar
Cheesecake:
- 10 ounces bittersweet chocolate
- 3/4 cup milk
- 3 (8 oz.) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1/4 cup cocoa powder
- 2 teaspoons vanilla extract
- 4 eggs
Topping:
- 1 (21 oz) can cherry pie filling or 8 oz black cherries pitted
- 1 cup heavy cream
- 3 tablespoons sugar
- 1/2 teaspoon vanilla
- Chocolate curls, for decorating
Instructions:
1. Preheat oven to 350°F.
2. In a large bowl, mix chocolate cookie crumbs, butter, and sugar together. Press into bottom of a 9-inch springform pan.
3. Bake crust for five minutes until set. Set aside to cool while making cheesecake.
4. In a medium microwave-safe bowl, combine milk and chocolate and heat in microwave 20-30 seconds at a time, stirring each time, whisk until mixture is completely smooth. Set aside.
5. In a large bowl, mix cream cheese, sugar, cocoa powder, and vanilla using an electric mixer until smooth, scraping sides of bowl as needed.
6. Add eggs, one at a time, mixing on low speed after each addition until just mixed. Don’t overmix.
7. Mix in melted chocolate until combined. Pour cheesecake batter over crust and spread evenly.
8. Bake for 50-60 minutes or until center is almost set. The center will still jiggle while edges will be set.
9. Turn oven off and crack oven door to allow cheesecake to cool slowly for 10 minutes, then remove cheesecake and carefully run a sharp knife around rim of pan to loosen cake.
10. Allow cheesecake to cool at room temperature for at least an hour, then cover and refrigerate for six hours or overnight.
11. Release sides of springform pan.
12. In a medium bowl, combine cream, sugar, and vanilla and beat using an electric mixer until thick, but still soft. Transfer to a piping bag with a decorative tip. Pipe swirls around border of cheesecake.
13. Add cherries and serve.
14. Store airtight in the refrigerator for up to three days.

Preparation: Start by preheating your oven to a steady 325 degrees.
Crust Formation: For the crust, take your Oreo cookies and place them in a zip-top bag. Crush them until they become fine crumbs. Once crushed, transfer the crumbs to a bowl and blend with the melted butter. This mixture is then scooped (about 1 tablespoon) into a mini cupcake pan, setting the stage for the creamy filling.
Cheesecake Mixture: In a separate mixing bowl, combine the softened cream cheese, heavy whipping cream, vanilla extract, sugar, and egg. Blend these ingredients on a medium speed until the mixture attains a creamy consistency.
Baking: Once your mixture is ready, scoop it into the mini cheesecake pan until they're about 3/4 full. Bake these delights for around 25 minutes. You'll know they're done when the centers are firmly set.

Crust:
1 1/2 cups crushed crackers
2 tablespoons sugar
