No Bake Mini Cheesecakes Recipe + Homemade Cherry Topping

Graham Cracker Crust Ingredients:
►1 1/2 cups graham cracker crumbs (from 12 whole crackers)
►1 Tbsp granulated sugar
►8 Tbsp unsalted butter (1 stick)
Ingredients for No-Bake cheesecake:
►16 oz cream cheese (from 2, 8-oz blocks), room temperature
►2/3 cup granulated sugar
►2 Tbsp sour cream
►2 Tbsp lemon juice, freshly squeezed
►1 cup heavy whipping cream

A fun family treat that has been made for years using different fruits.
2 (8-ounce) packages Challenge Cream Cheese, softened
1/4 cup sugar
1/2 teaspoon pure vanilla extract
1/2 T. lemon juice
2 eggs
12 vanilla wafers
1 (21-ounce) can cherry pie filling (or other pie filling)
Preheat oven to 350 degrees F.
Place a paper cupcake liner in each cup of muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, one at a time, beating well after each addition. Lay a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 15 minutes. Allow tarts to cool completely. Serve with cherry filling on top, or pie filling of your choice.

These delicious mini cheesecakes with a crunchy graham cracker pecan crust bake up in no time and are almost too easy to make! You can top them with whipped cream, berries, pie filling, melted chocolate, chopped nuts or serve plain!!

mini cheese cake 9/25/20
Ingredients
• 1 (12 ounce) package nilla wafers
• 2 (8 ounce) packages cream cheese
• 2/3 cup raw granulated sugar
• 2 large eggs eggs
• 1 teaspoon vanilla extract
• 1 (21 ounce) can cherry pie filling
Direction
• Step 1
Preheat oven to 350° F (175° C). Line miniature muffin tins (tassie pans) with miniature paper liners
Step 2
I just put wafers on bottom of cup but... you can crush the vanilla wafers, and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup.
• Step 3
In a mixing bowl, beat sugar, eggs and vanilla until light and fluffy then mix room temperature cream cheese. Fill each miniature muffin liner with this mixture, almost to the top.
• Step 4
Bake for 15 minutes. Cool. Top with a teaspoonful of cherry pie filling
