How To make Chocolate Covered Cherry Cookies
1 1/2 c Flour
1/2 c Unsweetened cocoa powder
1/2 c Butter or margarine
1 c Sugar
1/4 ts Salt
1/4 ts Baking powder
14 ts Baking soda
1 Egg
1 1/2 ts Vanilla
48 Undrained maraschino
-cherries (about one 10 oz -jar) 6 oz Pkg semisweet chocolate
-pieces 1/2 c Sweetened condensed milk
In a mixing bowl, combine flour and cocoa; set aside. In a large mixing bowl beat the butter with an electric mixer on medium to high speed about 30 seconds or until softened. Add sugar, salt, baking powder, and baking soda. Beat until well combined. Add egg and vanilla. Beat well. Gradually beat in the flour mixture. Shape dough into 1" balls. Place on ungreased baking sheet. Press down center of each ball with thumb. Drain marachino cherries, reserving juice. Place a cherry in the center of each cookie. In a small saucepan combine the chocolate pieces and sweetened condensed milk. Heat until chocolate is melted. Stir in 4 teaspoons of the reserved cherry juice. Spoon about 1 teaspoon of the frosting over each cherry, spreading to cover cherry (frosting may be thinned with additonal cherry juice if necessary). Bake in 350?F oven about 10 minutes or until done. Remove to wire rack to cool.

If you like Chocolate Covered Cherries you will like these cookies! They are Chocolate Covered Cherries in a cookie form and perfect for Christmas, Valentine's Day or anytime you are in the mood for one. I have listed the recipe below should you decide to make them. Enjoy!
CHOCOLATE COVERED CHERRY COOKIES
INGREDIENTS:
1/2 cup softened butter
1 cup sugar
1 large egg
1 1/2 tsp. vanilla extract
1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
30 to 48 Maraschino Cherries -blotted - ampoule will depend on the size cookie you make.
CHOCOLATE FROSTING:
1 cup semisweet chocolate morsels
1/2 cup sweetened condensed milk
2-4 tsps. Maraschino cherry juice from the jar
INSTRUCTIONS:
In a stand mixer cream together the butter and the sugar until light and fluffy.
Next beat in the egg and the vanilla extract.
In a separate bowl combine your dry ingredients.
Gradually add your dry ingredients to the creamed mixture and mix thoroughly.
Shape the dough into 1 inch round balls.
Place them on the cookie sheet.
Use your thumb to make a well in the center of the ball.
Place one cherry on each cookie in the well you make.
Bake the cookies for 10 minutes.
While the cookies are baking make your frosting by melting your chocolate chips and your condensed milk together. I use the microwave and check every 15 or 20 seconds by stirring to make sure the chocolate doesn't burn.
Next add your cherry juice to the chocolate mixture. Stir until smooth.
As soon as your cookies come out of the oven while still hot spoon one teaspoon of the frosting over the cherry covering it completely.
Allow your cookie to cool completely and make sure the chocolate is set before storing them in an airtight container.
I store mine is a single layer.
