Almond Chocolate Spread Recipe:
Almonds - 2 Cups
Vanilla essence - ½ tsp
Powdered Sugar - 1 Cup
Salt - ¼ tsp
Oil - 1 tsp
Cocoa Powder - ½ Cup
Instructions:
1. Heat a pan, add almonds
2. Dry roast the almonds for 10 minutes on a low flame
3. Blanch the almonds in boiling water for a minute.
4. Peel and separate the almonds and the skins.
5. Transfer it to a blender and blend it to a fine powder
6. Keep pulsing it till it lets out oil
7. Add the remaining ingredients and blend till it is smooth and combined.
8. Transfer it to a jar and store it in a cool and dry place or the refrigerator
Cooking Tips:
1. If the almond starts clumping up, add very little hot water to it and blend till it becomes smooth

Almond Chocolate Pear Cake Recipe
If you like pears and chocolate you should definitely try this Almond Chocolate Pear Cake. It is very flavorful due to the pears and almonds, and also chocolaty, moist and rich which makes it simply irresistable.

Ingredients
Makes about 10 servings
4 eggs, separated
7 oz (200g) semisweet chocolate (55-70%)
2/3 cup (150g) butter
1 tbsp (8g) unsweetened cocoa powder
1 cup (100g) ground almonds
1/4 tsp (2g) salt
1 tsp (5ml) almond extract
1/2 cup (100g) sugar
3 or 4 ripe pears, peeled, halved and cored
1. Grease and line a 10-inch (25cm) springform pan (with a removable base) with parchment paper. Separate egg yolks from whites. Preheat oven to 180°C (350°F).
2. Melt chocolate and butter over a bain-marie until smooth. Let it cool slightly. Add yolks one at a time and stir well.Stir in cocoa powder, ground almonds, salt and almond extract.
3. Whip egg whites until foamy using a mixer. Gradually add sugar and whip until soft peaks form. Gently fold the whipped whites into chocolate mixture.
4. Pour batter into prepared pan.
5. Cut pear halves in thin slices leaving one edge uncut.
6. Place the sliced pear halves on top of the batter and bake for 40-45 minutes.
7. Let it cool completely and refrigerate to set for at least 2 hours.

Chocolate Almond Sandwich Cookies are a wonderful treat with a cuppa or a glass of milk. Gluten free and easy to make, these will be a winner. Do not fill them while the cookies are hot or warm wait patiently for them to cool.
I Stored leftover cookies in the fridge, you can eat straight from the fridge or let them come to room temperature.
Makes 10 sandwich cookies
Cookies:
* 2 1/2 cups fine almond flour
* 1/2 cup arrowroot
* 2 tbsp coconut flour
* 1 tsp baking soda
* 2 tsp cinnamon
* 1/2 tsp nutmeg
* 1/4 cup ghee melted or coconut oil(or very mild EVOO)
* 1/2 cup maple syrup or coconut nectar
* 1 tsp vanilla
Chocolate Filling:
* 8 oz butter or coconut oil at room temperature
* 3 tbsp raw cacao powder
* 2 tbsp maple syrup
Cookies:
In a large bowl, combine almond flour, arrowroot, coconut flour, baking soda, cinnamon and nutmeg.
Stir in the melted ghee, maple syrup and vanilla then mix until well combined and able to form a ball.
Divide dough into two.Wrap each half in parchment paper tightening the sides and shaping to form two long even logs about 4 long and 3 in diameter.
When ready to bake, preheat oven to 350f/180c and line a baking tray with parchment paper.
Remove the dough and slice each log into ten rounds.Place the rounds on the tray spaced evenly to allow room to spread. Bake for 6 minutes. Rotate the baking sheets between the top and bottom oven racks and bake for another 6-8 minutes until cookies are golden. Let cool on a wire rack. Cookies crisp up as they cool.
Filling:
While the cookies are baking, beat the room temperature butter with the cacao and maple syrup.
Once cookies are cooled, make sandwiches by spreading 1 heaped tbsp filling onto half the cookies, then top each with another cookie.
