How To make Chinese Spareribs
1/2 c Butter or Margarine
1 Med. Clove Garlic *
1 Env. Soup Mix **
16 oz (1 Can) Tomato Puree
1/2 c Brown Sugar
1/4 c Imported Soy Sauce ***
1/4 c White Vinegar
1/4 c Chili Sauce
5 lb Spareribs ****
* Garlic Clove should be finely chopped. ** You can use the following soup mixes in this recipe: Onion, Onion- Mushroom, Beefy-Mushroom, Beefy-Onion recipe Soup Mixes. *** For best Taste use the Imported Soy sauce. Domestic can be used but will not taste as good. **** Country style spareribs can be used, but baby back ribs are the best. ~

Preheat oven to 375 degrees F. In large saucepan, melt butter and cook garlic with onion recipe soup mix over medium heat until garlic is golden. Stir in tomato puree, sugar, soy sauce, vinegar and chil sauce. Bring to a boil, then simmer, stirring occasionally, 15 minutes. Meanwhile,in large aluminium foil-lined baking pan or broiler rack, arrange spareribs, meaty side up, and bake 20 minutes. Brush spareribs generously with sauce, then continue baking, meaty side up, brushing occasionally with remaining sauce, 50 minutes, or untl spareribs are done. Makes about 12 Appetizer or 7 main
dish servings.

2 pounds pork baby back ribs
1 tablespoon extra light olive oil
5 garlic cloves
2 pods star anise
1 cinnamon
2 pieces fermented red bean curd
2 tablespoons fermented red bean curd sauce
2 tablespoon oyster sauce
2 tablespoon hoisin sauce
1 tablespoon dark soy sauce
2 tablespoons rose cooking wine (mei kuei lu chiew) (or substitute with other rice wine)
2 cups chicken stock
2 tablespoons rock sugar
3 tablespoons honey
6 tablespoons warm water

Marinating the pork (for at least 2 hours)

400g of spare ribs - cut into small pieces
2 tablespoons of light soya sauce
1 tablespoon of black bean paste
0.5 tablespoon of sesame oil
1 tablespoon of salted black beans - washed
4 cloves of garlic - minced
1 tablespoon of Chinese cooking wine (Shaoxing cooking wine)
1 teaspoon of sugar
1 tablespoon of young ginger juice
Add the following to the marinated pork before steaming

3 bird's eye chilli - sliced (optional)

Been working on these ribs a while, trying to get them perfect. I left out five spice since I felt the star anise was closer to what I get locally. Feel free to dust the rib parts, it may be the ingredient that your palette finds is missing comparing to the local stuff in the restaurant. I felt it wasn't necessary and star anise was really all that was required.
In my local restaurants they usually leave the fat on, feel free to leave it on if that's what will make it more authentic to you. I personally prefer lean meats as a good practice for healthy eating.
