Classic Red Wine Braised Short Ribs are melt-in-your mouth tender. Follow this traditional recipe for boneless short ribs braised with red wine in the oven. Short ribs are a comfort food: so simple, beefy, bold and fork-tender.

INGREDIENTS:
3 pounds Certified Angus Beef ® chuck short ribs, cut in 4-ounce chunks (2 x 3-inch each)
2 teaspoons coarse kosher salt
2 teaspoons fresh cracked black pepper
2 tablespoons canola oil
1 large onion, chopped
1 carrot, peeled and chopped
1 celery stalk, chopped
6 ounces can tomato paste
1 tablespoon minced fresh rosemary
1 tablespoon fresh thyme
5 bay leaves
1 cup red wine
1 1/2 cups beef stock

10 pieces calamansi
¼ cup soy sauce
Pepper to taste

500g of prime ribs (you can also use spare ribs or beef ribs)
1 piece star anise
1 piece of cinnamon bark (5 - 7 cm)
1 thumb size young ginger - minced
2 pieces shallots minced
4 cloves of garlic - minced
1 cup of Chinese rice wine
2 tablespoons of brown sugar
1 tablespoon of hoisin sauce
1 tablespoon of oyster sauce
2 tablespoons of low sodium light soy sauce
2 tablespoons of premium dark sauce
2 tablespoons of rice vinegar (or apple cider)

Chinese Braised Pork Ribs Recipe - 气压锅中式排骨
Ingredients below ⬇️ A pressure cooker or an Instant Pot will cut your cooking time significantly but the good ol' heavy pot works wonders too. These Chinese-style braised pork ribs are a must try!
This fall-off-the-bone recipe ticks all the boxes for braised pork ribs - the rich black sauce is sweet, sticky and slightly spicy and the pork ribs are charred, smokey and full of flavour.

1.1kg Spare ribs
3 pieces of salted fish (fried until crispy and reserve oil)
1 inch knob ginger (Smashed)
10 cloves Garlic (smashed with skin on)
2 tsp Fish sauce
1½ Dark soy sauce
2 tbsp Light soy sauce
150ml Rice wine
8 pieces Dried chillies (pre-soaked)
4 pieces Rock sugar
3 stalks Scallions (tied in a bunch)
2 tbsp Cornstarch solution (2 cornstarch:1 water)
2 tbsp Cooking oil

Shopping List:
2-3 lbs Beef Short Ribs (Bone in or Boneless - boneless ribs will cook faster)
2 cups red wine (cabernet or merlot)
2 cups beef broth
1 tbsp beef base
1-2 tbsps dijon mustard
2 tbsps tomato paste
2-3 carrots
2-3 stalks of celery
1-2 onions
2 bay leaves
rosemary and thyme
1 tbsp worcestershire sauce
1 tbsp low sodium soy sauce
salt, pepper, garlic, onion powder
Slurry: 2-3 tbsps corn starch + 1/4 cup cold water
Directions:
Begin by salting your short ribs 2-24 hours prior to cooking (preferably overnight). Heat your skillet over high head and add 1 tbsp avocado oil. Sear short ribs in batches until golden brown on all sides. Once all short ribs are seared, remove them and set aside. Reduce heat and add the celery, carrots, and onion. Sweat the veggies for 3-5 minutes and season with salt, pepper, garlic, onion powder. Add tomato paste and dijon mustard and mix to combine. Deglaze with red wine and bring to a boil for 2-3 minutes. Add short ribs to your pressure cooker or instant pot. Add the veggies and wine from the skillet to the pressure cooker along with 2 cups of beef broth. Season again and add worcestershire and soy sauce. Add fresh herbs and set for high pressure 55 minutes. (If using the oven, cover in a baking dish or dutch oven and bake at 325 for 3.5 hours or until fork tender.
