How To make Chinese Spaghetti
1/2 lb Bean sprouts
2 T Peas (fresh or frozen)
-per person 1 Cucumber
3 Eggs
1/2 c Green onions, chopped
1 c Chinese noodles (or
-linguine) per person 1 lb Lean pork or beef,
-chopped into small pieces 1 t Ginger, crushed
1 T Sesame seed oil
1/2 c Chicken broth
5 T Sweet bean sauce
-(or hoisin sauce) 3 T Soy sauce
1 T Chinese rice wine
1 1/2 t Sugar (omit if hoisin
-sauce was used) 1/2 t MSG
1 T Green onion, finely
-chopped TO PREPARE THE MEAT SAUCE: Heat about 3 T oil in wok, brown the ginger and green onion, then add meat and brown together. Mix together the bean (or hoisin) and soy sauces, add this mixture to the meat, and stir fry briefly. Then add rice wine, sugar, MSG and sesame oil. Add the chicken broth and simmer for about 3 minutes, until the sauce becomes thick and shiny. Put mixture in a serving bowl and set aside. (GARNISHES) : o Boil bean sprouts for 1 minute, drain, and put in serving bowl. : o Warm peas and put in a serving bowl. : o Cut cucumber into very fine strips, or grate. Place in serving bowl. : o Scramble eggs, fry into very thin pancakes, and cut into thin strips. TO SERVE: Cook noodles in boiling water for 3 minutes; drain. If you are preparing this dish ahead, rinse with cold water, drain, and add about 1 T sesame seed oil and mix well. Serve about 1 cup hot or cold noodles in a bowl, then add the garnishes and meat sauce to taste. NOTES: * The original Chinese spaghetti -- This recipe is an interesting variation from the usual restaurant chinese food. When I learned this dish, I realized that this was the origin of the Italian pasta dishes. It still serves as a reminder that there is a huge variety of Northern Chinese dishes that use wheat-based starches instead of rice. Yield: serves 6-8. * This dish can be prepared a day ahead and served cold. The selection of vegetables in the garnish is pretty arbitrary. All kinds of vegetable combinations are good. RECIPE
▪225g or 1/2lb thin spaghetti
▪salt
▪225g or 2.5c button mushrooms, halved and sliced
▪150g or 2c snow peas, cut into bite sized pieces
▪125g or 1 med carrot, julienned/shredded
▪150g/1 lrg red bell pepper, thinly sliced
▪4-6 scallions (root half only), chunky sliced
▪25g or 1.5-2 Tbsp ginger, grated
▪15g or 3-4 cloves garlic, grated
▪75-100g or 1 3/4c bean sprouts
▪20g or 1.5Tbsp high smoke point oil (avocado, peanut, canola, light olive, etc)
▪Stirfry sauce (recipe below)
▪Sesame seeds
Bring large pot of water to a boil. Add generous pinch salt and boil spaghetti until al dente. Cut veg. When pasta is done, drain and toss with high smoke point oil.
Preheat large nonstick skillet or wok over med-high heat then add long squeeze of high smoke point oil then mushrooms and pinch salt. Cook for about 3 min or until they’ve lost moisture and are taking on a golden color. Transfer mushrooms to a bowl.
Return pan to high heat and add another squeeze of oil, snow peas, bell pepper, and pinch of salt. Cook and stir for 60-90 seconds or until beginning to char, but still a bit crunchy. Add to bowl with mushrooms.
Return pan to high heat, add another long squeeze of oil followed by the spaghetti noodles. Stir fry for 2-3 min until well dehydrated on the outside. Once beginning to take on color, add ginger, garlic, scallions, and shredded carrot. Toss and stir fry until raw edge has cooked off of veg. Add back in mushrooms, peas, bell pepps, raw bean sprouts, and stir fry sauce. Stir and toss until sauce reduces to a glaze and everything is combined, about 1min.
Plate up and garnish with sesame seeds.
STIR FRY SAUCE - stir ingredients to combine
▪75g or 1/4c soy sauce
▪75g or 1/4c mirin
▪35g or 2.5Tbsp sesame oil
▪25g or 1.5Tbsp oyster sauce (or vegetarian hoisin)

LAY HO MA (how's it going in Cantonese)! It's a casual day today so why not whip up a fusion that nobody asked for. This delicious recipe is where chewy spaghetti noodles make friends with fresh veggies and an incredibly savoury and umami packed stir fry sauce. Join me in this episode and learn how to make a spaghetti chow mein recipe!
Ingredients:
2 pieces garlic
small piece ginger
2 sticks green onions
1/2 red onion
50g broccolini
1/4 red bell pepper
140g spaghetti
1/2 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp plantbased oyster sauce
1 tsp toasted sesame oil
1 tbsp chili oil (
1 tsp white sesame seeds
Directions:
1. Bring a pot of water to boil for the noodles
2. Finely chop the garlic and ginger. Chop the green onions into bite sized batons and slice the red onion. Chop the broccolini into bite sized pieces and thinly slice the red bell pepper
3. Boil the spaghetti for about 1min less to package instructions. Remember to stir occasionally
4. Make the stir fry sauce by stirring together the soy sauce, dark soy sauce, plantbased oyster sauce, toasted sesame oil, and chili oil
5. Strain out the spaghetti and toss with a splash of toasted sesame oil
6. Heat up a nonstick pan to medium heat. Add the chili oil followed by the red onions, garlic, ginger, and green onions. Sauté for about 2min
7. Add the broccolini and red bell peppers. Sauté for about 3min. Add the spaghetti and stir fry sauce. Sauté for another 2min
8. Plate the noodles and sprinkle on some white sesame seeds
