How To make Chicken and Potatoes Francais
2/3 lb (2 medium) potatoes
-- cut into 1/2-inch cubes 2 Green onions; sliced
2 Chicken breast halves
boned and skinned :
(about 4 ounces each) Salt and pepper, to taste 1 Garlic clove; minced
2 ts Dijon-style mustard
1 ts Chopped fresh tarragon; OR
1/2 ts -Dried tarragon
1/3 c Dry white wine
-OR- chicken broth 2 tb Light sour cream
Place potatoes in shallow 1-quart microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave on HIGH 3 minutes. Coat large nonstick skillet with vegetable cooking spray. Add potatoes and onions; push to one side and add chicken. Cook over medium heat, tossing potatoes occasionally and turning chicken once until potatoes are tender and juices run clear when chicken is pierced, about 15 minutes. Season with salt and pepper. Remove chicken and potatoes to platter; keep hot. Add garlic to skillet; mix in mustard, tarragon and wine; cook over high heat 1 minute. Remove from heat; whisk in sour cream. Season with salt and pepper. Pour sauce over chicken. NOTE: Microwave cooking times are based on a 700-watt microwave. Adjust cooking times to your own oven. INGREDIENTS
2 and half to 3 lbs Chicken (I used 4 chicken drumstick 3 chicken thighs)
1/4 cup olive oil
2 Tablespoon Salted butter
1 Tablespoon dijon mustard
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons paprika
2 teaspoons dried oregano
2 teaspoons dried thyme
1 and 1/2 Tablespoon brown sugar
Salt and pepper to taste
1/2 of a mandarine or 2 Tbs orange juice
7 medium potatoes
Olive oil ( To drizzle on potatoes

Potato fondant or also known in French as Pommes De Terre Fondantes is a technique used by cutting potatoes into cylinder sahpes and browning the ends while slowly braising and roasting in stock and butter. There's probably not a better potato as they become creamy inside and buttery roasted on the top. Great served with meats or most dishes as a side potato dish.

Edit: A little note that I missed in the video; please place your dish in the middle of your oven uncovered at 190C for 35 minutes or until the potatoes are cooked through and the chicken is fork tender :) Braising it uncovered will leave you with the crispiest chicken skin and potatoes you could ever imagine in a braised dish.. INGREDIENTS (SERVES 3-4) ►
5-6 bone-in, skin-on chicken thighs; you could use legs or breasts instead
1/4 tsp of salt
Ground black pepper to taste
3-4 tbsp of all-purpose flour
5-6 baby potatoes, halved lengthwise; feel free to omit to make it low-carb
2 tbsp of oil
4 shallots or 1 white onion; chopped
15 cloves of garlic, lightly crushed to release the flavour
A few sprigs of thyme and rosemary
300 ml warm stock; I like chicken stock, vegetable stock is great as well
1 tbsp of mustard; I like dijon mustard here
1 tsp to 1 tbsp of honey
1/2 cup of double cream
Parsley or/and chives, minced for garnish (optional)
