How To make Chicken Tamale Pie
8 1/2 oz Corn muffin mix
1 c Cheddar or Monterey Jack;
-shredded 1 1/2 c Chicken or turkey; cooked
-shredded 10 3/4 oz Cream of chicken soup
4 oz Chiles, green; chopped
1 c Corn, whole kernel
1/2 c Scallions; chopped
1 Garlic clove; minced
1 ts Chili powder
Prepare muffin mix as directed on package, adding 1/2 cup of the cheese with the mix. Set aside. (Do not bake.) Cook and stir chicken, soup, chilies, scallions, garlic and chili powder in a large saucepan until heated through. Spoon muffin mixture into a greased 2 quart casserole. Spoon hot soup mixture over muffin mixture to within 1/2" of the edge. Bake at 350 degrees for 25 minutes or until cornbread is golden. Top with cheese. This Chicken Tamale Casserole is a simple, easy and delicious way to have the flavors of tamales on a weeknight! The crispy, crumbly cornbread is topped with shredded cheese, chicken and a host of Mexican flavors and baked to perfection in the oven – what’s not to love!

INGREDIENTS:
Cornbread:
2 packages 6.5-8.5 ounces each cornbread mix
2 eggs
2/3 cup milk
Filling:
3 cups cooked shredded chicken
1 can black beans drained
1 1/2 cups corn
1 can 4 oz diced green chiles
2 cans 10 ounces each red enchilada sauce
1-2 cups shredded cheddar cheese

Cheesy Chicken Tamale Pie | Cheesy Baked shredded chicken
A perfect recipe for the weekend!
INGREDIENTS
Butter for greasing
1 cup masa
1/2 cup cornmeal
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon chipotle powder
1 teaspoon salt
1/2 teaspoon black pepper
1 egg
2/3 cup buttermilk
1/3 cup chicken stock
1/2 cup diced green chilies
INSTRUCTIONS
Preheat oven to 400°F. Grease a cast-iron skillet with butter. (You can also use a round pie dish if you'd like.)
In a mixing bowl, mix together all ingredients for the crust and pour into pan. Bake for 20-30 minutes until puffed and golden.
Filling
INGREDIENTS
1/2 cup red onion, chopped fine
3/4 cup fire-roasted tomatoes
1-2 tablespoons jalapeño, chopped and seeded (optional)
1/3 cup corn kernels, thawed
1 1/2 cups chicken, pulled or chopped
1 1/2 cups of your favorite enchilada sauce
1 cup cheddar cheese, grated
1 cup jack cheese
Cilantro, sour cream and hot sauce for serving
INSTRUCTIONS
Mix together red onion, tomatoes, jalapeño, corn, chicken enchilada sauce and half the cheese.
Pour filling into baked crust and top with remaining cheese, bake for another 15-20 minutes until hot and bubbly.
Slice and serve with cilantro, sour cream and hot sauce, if desired.

Tex Mex Chicken Tamale Pie with Jiffy ~ Easy Tamale Pie Recipe
INGREDIENTS:
1 TO 1 1/2 pounds small diced boneless chicken
1 to 1 1/4 cup tomato sauce
1/4 cup salsa
1 cup finely diced onion
1 cup finely diced bell pepper
1 small can green chilies
1/8 tsp. black pepper
3-4 cloves minced garlic
1 tsp. oregano
1 tsp. chili powder
1 tsp. smoked paprika
1 tsp. cumin
1 cup corn
1 cup rinsed and drained black beans
1 cup grated cheese - cheddar or mix
chopped green onions
1 box corn muffin mix
1 egg
1/3 cup milk
1/4 cup corn
1/4 cup grated cheddar cheese
*Mix above ingredients. Do not over mix
Preheat oven to 400 degrees Farenheit
In a pan on medium high heat add a little oil and chicken.
Cook and stir for 2-3 minutes or no longer pink.
Add diced onions, bell peppers and a little salt.
Cook and stir for another 2 minutes.
Add minced garlic and stir.
Add seasonings. Stir and cook for another minute.
Add tomato sauce and stir.
Add salsa, green chilies, corn and black beans.
Stir, bring up to a simmer and cook for 2-3 minutes.
Turn off heat.
Add a little grated cheese on top of beef mixture.
Add corn muffin mix by spoonfuls on top of mixture and spread out
as best as you can.
Bake at 400 degrees farenheit for 25 to 30 minutes.
Remove from oven and top with more grated cheese and chopped onions.
Let cool for 10-15 minutes before serving.
Enjoy.
