How To make Chicken Saronno
6 Boneless, skinless chicken
Breast halves Salt, pepper, garlic powder, Curry powder, flour 1/4 c Butter or margarine
1/2 lb Fresh mushrooms, thickly
Sliced 1/4 c Amaretto di Saronno
Grated rind & juice of one Lemon 1 1/2 c Chicken broth
1 tb Cornstarch
Patty shells Cut chicken into 1-inch wide strips. Sprinkle with salt, pepper, garlic powder and curry powder. Roll strips in flour. Heat butter or margarine in a large skillet. Brown chicken pieces on all sides. Add mushrooms, Amaretto di Sarono, grated lemon rind and juice. Simmer 5 minutes. Mix chicken broth and cornstarch; stir mixture into skillet. Stir over low heat until mixture bubbles and thickens. Season to taste with salt, if necessary. Spoon mixture into patty shells. Optional garnish: diced tomato and parsley.

Hey guys I hope you enjoy this recipe I know I sure do, a little secret.... If you cook these amaretto cookies till they are crunchy; over 15 mins, they have the exact same texture and taste as Greek Koularakia!! So give it a try both ways! Happy baking!
Soft Amaretti Biscuits
Ingredients:
200 g ground Almond (or coconut)
90 g icing Sugar
2 eggs whites
Few drops of bitter almond extract (optional)
Bake for 12 minutes at 180' degree Celsius
Little tip in case your dough feels too runny add 20 gr of almond flour

????Ingredients: (Soft Amaretti Lemon cookies - 30 cookies):
2 cups blanched almond flour sifted (200 g)
1 cup granulated sugar (200 g)
2 egg whites large
1/3 cup confectioners’ sugar (55 g)
1/2 tsp almond extract
Pinch of salt
????Directions:
Pre-heat Oven on 320°F (160°C)
Step#1- Using a handheld mixer whisk egg whites, salt and almond extract until frothy. Slowly add the sugar and continue beating. Zest the lemon peel right in.
Step#2- Sift almond flour and fold in gently using a spatula turning from bottom to top.
Step#3- Using a 1 tablespoon ice cream scooper form cookies. Roll between your palms and into confectioner’s sugar.
Step#4- Place on a parchment paper lined cookie sheet. Pinch cookie using thumb, index and middle finger creating a pyramid shape.
Step#5- Bake at 320°F (160°C)- for 20 minutes.
Cool and enjoy!
They store well in an airtight container up to a week.
Amaretto Butter Basted Turkey
