Chef Shantanu Gupte brings to your table a heart-warming dinner full of delectable flavors. He is up with an absolutely mouth-watering chicken casserole recipe which your family will ask for again and again.
Chicken Casserole Recipe Ingredients:
100 grams shredded boneless chicken
7-8 mushrooms
2 tbsp olive oil
1 tbsp butter
1 tbsp garlic
onion
leaves of thyme & rosemary
1 cup spinach leaves
salt & pepper to taste
mustard sauce
red chilli - chopped
1/4 cup cream
tomato - chopped
1 egg
pinch of nutmeg
70-80 grams cheese
basil leaves - chopped
cheese for garnish
Method:
To make the sauce:
- In a pan, add the butter and let it melt.
- Once the butter melts, add the all-purpose flour and whisk well.
- Then add the milk to the flour and butter mixture and let it boil.
- Once the milk starts to boil, it begins to reduce. Whisk well while it reduces to avoid the flour sticking to the bottom of the pan.
To make the chicken:
- While the pan is heating up, slice up the mushrooms.
- Once the pan is hot, pour in the olive oil and add the butter.
- Then add the chopped garlic and onion and give it a quick stir.
- Add the sprigs of thyme and stir well.
- Add the medium-sized boneless chicken pieces and give it a nice toss.
- Once the chicken is almost cooked, add the mushroom slices to the pan and give it a toss.
- Add salt and pepper to taste and toss again.
- Once the mushroom and chicken are cooked, add the roughly chopped spinach leaves to it.
- Once they are cooked, add the chopped tomato to it. Make sure that you peel off the skin of the tomato.
- Add the sauce to the chicken and whisk it through.
- Once cooked, put off the flame and add the cracked pepper, little mustard sauce, 1 chopped red chilli, cream and 1 egg. Also add the grated nutmeg to it and mix all the ingredients well.
- Add the grated cheese to the above ingredients and mix well.
- Transfer the casserole to the baking tray and add the chopped basil leaves, chopped tomato and the grated cheese.
- Place this in a pre-heated oven (170 - 180 degrees Celsius) for about 7-8 minutes.
- The delicious chicken casserole is ready to be served.

A casserole is a variety of a large, deep pan or bowl used for cooking a variety of dishes in the oven; it is also a category of foods cooked in such a utensil. To distinguish the two uses, the pan can be called a casserole dish or casserole pan, whereas the food is simply a casserole. The same pan is often used both for cooking and serving.

Additional Notes:
Chicken Selection: Use boneless, skinless chicken breasts or thighs for this casserole. You can choose either option based on your preference. Make sure to cut the chicken into bite-sized pieces for even cooking.
Potato Variety: Opt for starchy potatoes like russet or Yukon Gold, as they hold their shape well during baking. Cut the potatoes into uniform chunks to ensure they cook evenly.
Vegetables: Feel free to add vegetables to the casserole for added flavor and nutrition. Diced onions, bell peppers, carrots, or peas work well. Sauté them before adding them to the casserole to soften them slightly.
Sauce or Creamy Base: You can use a prepared sauce like cream of chicken soup or make a homemade creamy base using a combination of chicken broth, milk, and flour. This adds moisture and flavor to the casserole.
Cheese Topping: For an extra touch of indulgence, sprinkle shredded cheese over the casserole before baking. Cheddar, mozzarella, or a blend of cheeses work well. The cheese will melt and create a delicious golden crust.
Baking Time: Bake the casserole at a moderate temperature, around 375°F (190°C), until the chicken is cooked through, and the potatoes are tender. The baking time will depend on the size of the chicken and potato pieces, so check for doneness by piercing them with a fork.
Garnish: Once the casserole is out of the oven, garnish it with fresh herbs like chopped parsley or chives to add a pop of freshness and color.
Leftovers: Store any leftovers in an airtight container in the refrigerator. Reheat them in the oven or microwave until heated through. The casserole can be enjoyed for up to 3-4 days when properly stored.
