We're with John Whaite, making the ultimate Christmassy comfort meal – chicken and stuffing lattice pie. Cosy, comforting, rich but delicate, this pie is filled with chicken thigh fillets, root veg and creme fraiche before being topped with sage & onion Stuffing and a handful of Christmassy cranberries.

Ingredients:
For the pastry:
300g plain flour
1 tsp fine salt
200g unsalted butter, diced and chilled
100g creme fraiche
1 British Blacktail Free Range Medium Egg yolk, beaten, to glaze
For the filling:
2 tbsp sunflower or rapeseed oil
1 small pack (about 0.5kg) Essential British Chicken Thigh Fillets, cut into small pieces
125ml white wine (or 50ml vodka)
1 large onion, finely chopped
1 medium leek, finely chopped
2 sticks celery, finely sliced
2 tbsp plain flour
500ml chicken stock
100g frozen peas
½ x 25g pack flat leaf parsley, roughly chopped
50g creme fraiche
For the stuffing:
85g Paxo Sage & Onion Stuffing Mix
80g dried cranberries

Who doesn't love chicken pot pie. This budget friendly version is friendly to nomads cooking in a van or a beginner cook in a sticks and bricks looking for a simple quick dinner recipe. No serious cooking here, just a drop and go meal. It will taste like you spent hours in the kitchen, but only take minutes to prepare.
Here are the ingredients:
2 12.5 ounce cans of Costco chicken breast,
drained except for about 1/4 cup of juice,
( You can use cut up cooked chicken),
1 Box of Stove Top Stuffing of choice,
( I like the turkey for this recipe),
1 Package of thawed frozen mixed veggies,
1 12oz jar of Turkey Gravy,
1 1/2 cups chicken broth( substitute for water)
1/3 - 1/2 cube of butter,
Approx. 1 tbs minced garlic,
SEASONINGS TO TASTE :
Seasoned salt of choice
Thyme aporox 1 tsp or more,
Rosemary approx 1 tsp or more,
1 package Sazon seasoning,
