How To make Cheesy Cauliflower Casserole
3 cups cauliflower
cut in pieces
1 jar (2 oz.) pimento :
drained
2 Tablespoons chopped green pepper
1 can (8 oz.) sliced water chestnuts
2 hard cooked eggs chopped optional
1 small onion :
chopped
1 cup grated cheddar cheese
SAUCE: 4 Tablespoons butter melted
3 Tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups milk
1 cup American cheese :
cubed
TOPPING: 1 cup cheese crackers -- crushed
3 Tablespoons grated Parmesan cheese
Layer cauliflower, pimento, green pepper, water chestnuts, eggs, onion and cheese in 2 1/2 quart casserole. Make sauce by melting butter and stirring in flour, salt and pepper. Cook and stir 1 minute. Add milk gradually. Add cheese and cook until thickened. Pour over vegetables. Combine topping ingredients; sprinkle over all. Bake at 350 for 30 minutes. Yield 12 servings.

INGREDIENTS
1 1/2 large heads cauliflower
6 tbsp. butter, plus more for buttering dish
1/2 c. heavy cream
3 cloves garlic, minced
2 c. shredded white Cheddar
1 c. grated Parmesan
1 tbsp. fresh thyme leaves
kosher salt
Freshly ground black pepper
DIRECTIONS
1. Preheat oven to 400º. In a large pot of salted boiling water, cook cauliflower until tender, 8 minutes. Drain well.
2. Butter a large baking dish. Add half the cauliflower and pour over half the heavy cream. Dot with half the butter, sprinkle with half the garlic, cheddar, Parmesan, and thyme. Repeat with remaining ingredients and season with salt and pepper.
3. Bake until cheese is melty and deeply golden, 30 minutes.
Let cool 5 minutes, then serve.

Cheesy Spicy Mayo Baked Cauliflower. Absolutely DIVINE. If you are not a lover of cauliflower I am almost positive I can convert you with this recipe. It is so delicious and creamy and the sauce is to die for. You will need:

1 medium cauliflower
1/3 cup vegan mayo (or any)
1 teaspoon hot sauce (any)
1 minced garlic clove
salt and pepper to taste
3 tablespoons grated parm
1 tablespoon pesto (sun-dried tomato or any)

Please note : I love “ vegenaise “ mayo but ANY will work. You can absolutely make this vegan if you use a vegan Parm or any plant-based cheese. Even some nutritional yeast will work. Feel free to use any pesto (or leave it out) it will be delicious without it too. Any herbs or spices are optional here

1. Wash and cut the stem off your cauliflower so that it lays flat. Add some water to a pot and place your cauliflower. Lid on and steam it for 10 minutes on medium-low. 10 minutes from the boiling point. In the meantime mix your sauce. Place your steamed cauliflower onto a baking dish lined with parchment paper and turn into Picasso by slathering it in your sauce. Bake in a pre-heated 425F oven for 18-20 minutes or until golden. The timing will depend on the oven. Enjoy and follow for more ???? P.s this is perfect for meal prep and incredible the following day too. Store it in the fridge or divide it into portions for lunch with any protein of choice. You can also cut your cauliflower into florets once it’s baked and add it to tacos with guac ( drooling ) Love you !

INGREDIENTS
2 small heads cauliflower or 3 packs frozen cauliflower
3 tbsp. butter
1 tsp garlic powder
3 tbsp. all-purpose flour
2 cups whole milk
2 oz. cream cheese, softened
1 1/2 cups shredded cheddar
Salt and pepper
Bacon bits
1/4 cup sliced green onions
DIRECTIONS
Preheat oven to 350°. In a large pot of salted boiling water, blanch cauliflower, 3 minutes. Drain cauliflower of water. If using frozen cauliflower thaw in microwave for two minutes.
Make cheese sauce:
In a large skillet, melt butter, add garlic
Then add flour and stir until golden.
Add milk and bring to a low simmer.
Then add cream cheese, whisking until combined.
Remove from heat and stir in 1 cup cheddar until melted.
Then season with salt and pepper.
In a 9”-x-13” dish, add drained cauliflower. Pour the cheese sauce over and stir until combined. Add the bacon bits and green onions, Save a few for the top. Then top with remaining cheddar, bacon, and green onions.
Bake until cauliflower is tender and cheese is melted about 30 minutes.
