How To make Cheesecake, Lowfat
Ingredients

cream cheese, fat-free, packages, softened
3/4
cup
sugar
1
teaspoon
vanilla
3
each
eggs
4
each
graham crackers, lowfat, whole, crushed
5
teaspoon
sugar
1
cooking oil spray
Directions:
Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until just blended. DO NOT OVERMIX AFTER ADDING EGGS. Mix graham cracker crumbs with 2 tablespoons sugar. Spray a 9 inch pie plate with cooking spray; sprinkle crumb mixture over bottom and sides. Pour cream cheese mixture into pie plate.
Bake at 325 degrees for 45 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top with fruit or pie filling if desired.

CRUSTLESS CHEESECAKE RECIPE
(makes 8 slices)
Ingredients:
2.5 cups ricotta cheese (625g)
2 tsp vanilla extract
2 tbsp lemon juice
1/3 cup maple syrup, honey or agave (80ml)
3 large eggs
1/2 cup heavy cream (120ml)
1/4 cup ground oats, or oat flour (25g)
NUTRITIONAL INFO (per slice):
207 calories, fat 10.9g, carb 15.4g, protein 11.5g
Preparation:
In a bowl, add the ricotta cheese, vanilla extract, lemon juice and maple syrup, and mix with a mixer on low for 1 minute.
Add and mix in the eggs one at a time.
Add the heavy cream and oats, and again mix it just until incorporated.
Line your cheesecake pan with double layer of parchment paper and pour in the batter.
Bake at 400F (200C) for 50-60 minutes, depends how much browning you want on the top of your cheesecake.
Let it cool to room temperature, then place in the fridge to chill for couple of hours.

Ingredients:
For the gelatin:
2 tablespoons (18g) Gelatin powder
1/3 cup + 1 tablespoon (90ml) Milk
For the cheese mixture:
2 Eggs
1/3 cup (30g) Cornstarch
1¾ cups (420ml) Milk
1 teaspoon Vanilla bean paste
1/3 cup (115g) Honey *or any other sweetener
3 cups (675g) Low fat-High protein cheese *read notes
Farmers cheese/cottage cheese/white cheese/cream cheese
Orange zest
Directions:
1. Prepare 18cm (7-inch) cake ring. Line the ring with cake collar. Set aside.
2. In a small bowl place gelatin, add milk, mix and allow to bloom for 10-15 minutes.
3. Meanwhile make the cream: in a saucepan, place eggs, cornstarch and 1/4 cup (60ml) milk. Whisk until smooth and no lumps. Add the remaining 1 3/4 cups of milk and mix well.
4. Place the saucepan over the stove and heat over low heat, while constantly whisking until thickens, it takes about 5-7 minutes. When thickens, remove from heat and add honey and vanilla bean paste. Mix until incorporated.
5. Add the cheese and mix until well combined and smooth.
6. Melt the gelatin in the microwave for 15 seconds. Temper the gelatin: Gradually add few tablespoons of the cake mixture into the dissolved gelatin and stir until combined. Pour back to the cake mixture and mix until combined.
7. Pour the mixture into prepared cake ring and refrigerate for at least 6 hours or overnight.
8. Release from the ring/pan and decorate with fresh fruits.
