Croque Monsieur Sandwich & Croque Madame - Grilled Cheese
Croque Monsieur sandwich is a delicious Parisian ham and cheese sandwich made with gruyere, parmesan, ham, and a simple Mornay sauce, toasted in the oven. Top it with a fried egg and you have a Croque madame!

Croque Monsieur sandwich
This Croque Monsieur recipe was inspired by the many trips to Paris I’ve taken over the years. You can find a Croque Monsieur or Croque Madame sandwich on almost every restaurant menu in the city of Paris.
Ingredients:
8 slices thick white sandwich bread
4 Tbsp. (60 ml) unsalted butter, melted
1 garlic clove, peeled and cut in half
12 ounces thinly sliced Black Forest deli ham
¼ cup (25 grams) grated Parmesan cheese
1 cup (113 grams) Gruyère cheese, shredded
Mornay Sauce
Ingredients:
2 Tbsp. (30 ml) unsalted butter, melted
2 Tbsp. (22 grams) all-purpose flour
1 cup (240 ml) whole milk
1 cup (113 grams) Gruyère cheese, shredded
¼ cup (25 grams) grated Parmesan cheese
1 Tbsp. (15 ml) wholegrain mustard
Pinch ground nutmeg
Directions:
Adjust the oven rack to the second shelf from the broiler element and heat the oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil and spray with olive oil spray.
Brush the bread on both sides with the melted butter and place on the prepared baking sheet. Bake until the bread has turned golden brown - this takes about 10 minutes. Rub each slice with the garlic, turn over and brown the second side. Once browned, rub the second side with garlic. Remove and reserve 4 slices for the sandwich tops. Evenly space the remaining 4 slices of toast on the baking sheet.
Prepare the Mornay Sauce:
Melt 2 Tbsp. butter in a saucepan over medium-low heat. Add the all-purpose flour and cook, whisking constantly, until butter and flour are well combined and foaming, but still very pale in color, about 2 minutes. Very slowly, stream in the 1 cup whole milk, whisking constantly, until the mixture is pale and smooth. Add the cheese, mustard, and a pinch of mustard. Whisk till all is combined and the cheese has melted.
Assembling the Sandwiches:
Spread 1 tablespoon of Mornay sauce on each of the four slices of toast on the baking sheet. Top each piece of toast with 3 slices of ham. Spread 2 tablespoons of sauce on 1 side of each reserved slice of toast and place slices sauce side down on top of the ham.
Spread 2 tablespoons of sauce evenly over the top of each sandwich, being sure to not leave any bread exposed (it will burn). Evenly sprinkle the sandwiches with the grated Parmesan, followed by the Gruyère cheese.
Place the baking tray in the oven and bake until the cheese on top of the sandwiches is melted, about 5 - 7 minutes. Turn the oven to the broiler setting and broil until the cheese bubbles across tops of sandwiches, the edges are spotty brown, and the cheese caramelizes - about another 5 minutes. Remove from oven and cut the croque sandwich in half.
Feel free to garnish your Croque with fresh chopped chives or minced thyme.
For a Croque Madame, add a fried egg to your Croque Monsieur sandwich recipe.
Serves 4.
Easy Croque Monsieur tips for success:
1. Quality ingredients matter. Particularly fresh cheeses and good quality black forest ham and good quality Gruyere cheese.
2. Make the Mornay sauce ahead of time. The Mornay can be made one day in advance to cut down on prep. Make it as instructed, allow it to cool. Place plastic wrap directly onto the surface and chill.
Served with a side of French fries and a little pile of salad greens, a Croque-Monsieur is everything that's great about eating in Paris—even their snacks are somehow sublime and otherworldly.
