Our go-to Meatball Recipe. Find out our secrets to big and juicy homemade meatballs. They are make-ahead and freezer friendly which makes them perfect for meal prep.

Ingredients for Juicy Meatballs:
►3 slices white bread (crusts removed), diced
►2/3 cup cold water
►1 lb lean ground beef (85/15 fat content)
►1 lb ground pork
►1/4 cup grated parmesan cheese
►1 large egg
►3 garlic cloves, minced
►2 Tbsp parsley, finely chopped
►1 tsp sea salt
►1/2 tsp black pepper
►2 Tbsp olive oil, to sautee

►Freezing uncooked meatballs:
Prepare the meatballs through Step 5. Arrange in a single layer on a baking sheet and freeze until solid. Transfer the meatballs to a freezer container or freezer bag, and freeze for up to 1 month. (Meatballs can be frozen for longer, but tend to develop freezer burn.) Thaw meatballs in the refrigerator overnight before cooking.
►Freezing cooked meatballs:
Let the cooked meatballs cool completely, then arrange in a single layer on a baking sheet and freeze until solid. Transfer to a freezer container or bag and freeze for up to 2 months. Frozen meatballs can be thawed overnight in the refrigerator or reheated directly from the freezer. Reheat meatballs in a simmering sauce for 10 to 15 minutes or in a warm oven for 10 to 15 minutes.

Meatballs:
1LB lean ground beef
Salt and pepper
1tsp paprika
1tbsp Worcestershire sauce
2tbsp dry bread crumbs
2tbsp diced onion
1clove of garlic, pressed
1 large egg
Bake at 375F until meat temperature reaches 165F (17-20 minutes)
1large onion, diced
2tbsp olive oil
1 medium size carrot, diced
2 small bell peppers, diced
2 stalks of celery, diced
2 cloves of garlic, pressed
1large tomato, diced (1-1/2 cup)
Fresh thyme
1/2tsp dry oregano
Salt and pepper
1tbsp beef base
8-9 cups water or beef broth
1cup frozen green beans
2 cups fresh spinach
1-1/2 cup (150g) egg noodles
1 ciabatta bread
2tbsp melted unsalted butter
1tsp garlic powder
1-1/2 cup grated cheese
Bake at 375F for 10 minutes

Meatball Soup is a classic Italian dish that has nothing to do with weddings!
Italian Wedding Soup is the ultimate in Italian comfort food. It's made with chicken stock, carrots, celery, onion pasta and tasty cheesy meatballs. When it rains, and your house is nice and cosy, this is the soup to make. Why a wedding soup? It's nothing to do with weddings, but it is a beautiful marriage of meat and vegetables.
When making this soup, please use homemade chicken stock. You don't have to go all out; it can be as simple as throwing a chicken carcass in a pot of water and simmering it for 90 minutes. You will never achieve the same depth of flavour with bought stocks or cubes.
I would highly recommend doubling the quantity and freezing half. This is the sort of soup you will crave many times once you've tasted it. Knowing there's this soup waiting for you when you come back from a trip late in the day will make your day!
I added provolone cheese for little bursts of flavour; it is optional but recommended. Otherwise, just grate a little more pecorino. You could also use Parmesan cheese.
Use the small pasta you like, anything from Ditalini, cavatelli, fusilli, orzo, pastina etc. If you're going to eat all the soup the same day, you can cook it directly in the pot. Otherwise, cook them separate so they remain nice and al dente.
For the greens, it's best to use escarole or curly endives. They are loaded with vitamins making this soup healthy. The flavour works magically for soups.

Spicy Meatball Soup is wonderful and easy to make. The spices warm you up inside on a cold winter day or a rainy evening!
SPICY MEATBALL SOUP
Ingredients
250 grams chicken mince
3 cups chicken stock
1 tablespoon finely chopped leek
1 inch celery, finely chopped
1 medium onion, finely chopped
1 tablespoon chopped garlic
1 small carrot, peeled and finely chopped
Salt to taste
1 teaspoon oil
1-2 red chillies, diagonally sliced
100 grams rice vermicelli
3-4 spinach leaves, shredded
Juice of 1 lemon
Method
1. To prepare meatballs, mix together chicken mince, leek, celery, onion, garlic, carrot and salt in a bowl.
2. Dampen your palms with some water, divide the chicken mixture into small equal portions and shape into balls.
3. Heat oil in a deep non-stick pan. Add red chillies and sauté for 30 seconds. Add chicken stock, cover and bring the mixture to boil.
4. Add salt and rice vermicelli, cover and cook for 3 minutes. Add meatballs and mix. Add spinach leaves, mix, cover and cook for 2-3 minutes. Switch of the heat, add juice of ½ lemon.
5. Pour in individual serving bowls. Add some lemon juice on top and serve hot.

How to make Swedish Meatballs | Homemade Ikea Meatballs
Juicy flavour-packed meatballs in that classic rich and creamy Swedish meatball sauce.
It makes such a great comforting dinner served with mashed potato and of course some lingonberry jam (although I've got some other suggestions if you can't find it).

Swedish Meatballs Ingredients:
Meatballs:
500 g (1lb)beef mince - ideally 20% fat
250 g (1/2 lb)pork mince
1 onion - finely chopped
1 clove of garlic - minced
4 tbsp panko breadcrumbs
1 medium egg
5 tbsp (75ml) full-fat milk
½ tsp salt
¼ tsp black pepper
¼ tsp white pepper
¼ tsp allspice
2 tbsp vegetable or olive oil
Sauce:
3 tbsp unsalted butter
3 tbsp plain - all-purpose flour
180 ml (3/4 cup) beef stock
120 ml (1/2 cup) vegetable stock
120 ml (1/2 cup) double (heavy) cream
2 tsp dark soy sauce
1 tsp Worcestershire sauce
1 tsp Dijon mustard
¼ tsp salt
To Serve:
Finely chopped fresh parsley
Creamy mashed potato
Lingonberry jam - or redcurrant jelly
Green veg – such as broccoli or green beans
