How To make Cheese Brioche 1
1 c WATER
2 oz MARGARINE
1 ts SALT
1 ts CAYENNE PEPPER
1 c UNBLEACHED WHITE FLOUR (SIFT
3 ea EGGS (WHOLE)
3 oz GRUYERE CHEESE (FINELY DICED
Preheat oven to 375 F. In a 1 quart saucepan on a low flame, bring water, margarine, salt, and cayenne to a boil. When margarine melts, lower heat. Add flour. Dough will form a ball. Stir ball with a wooden spoon continually for 2 to 3 minutes. Scrape bottom of pan often to keep dough from sticking. Remove from heat and place dough in a large mixing bowl. Spread dough in the bowl and let cool for 10 minutes. Since your hands will soon become very sticky, place a large baking sheet near bowl before beginning next step. When dough is cool enough so that eggs do not cook in dough, add all of eggs to dough. Mash by hand until eggs are completely mixed. Add cheese and mix thoroughly. Place ball of dough in center of ungreased baking sheet. Spread dough from center to form a 5 x 8 inch oval ring. -----

Cheese Surprise Butter Brioche Recipe | iCookAsia
Buttery and rich in flavor, this beautiful Cheese Surprise Butter Brioche will surprise you by its extremely soft and airy texture inside and its slightly crispy crust on the outside. Enjoy it with fruit jam and a cup of coffee!
Ingredients:
1 cup warm milk
1/4 cup sugar divided
2 tsp dry active yeast
4 1/2 cups all-purpose flour
2 tsp salt
5 eggs
Margarine 113g
250g mozzarella cheese – cut to 8 cubes
250g cheddar cheese – cut to 8 cubes
Method:
1. Warm 1 cup of milk to about and add 1 tbsp sugar and 2 tsp of dry active yeast. Give it a
stir and set aside let it become frothy
2. In a mixing bowl, place all-purpose flour, remaining sugar, and salt in your beat bowl
and make a well with a spatula.
3. Pour the yeast mixture and 4 eggs into the flour and beat it slowly with the hook
attachment. Then pick up the speed to high.
4. When no more patches of flour appear add in the sliced 1/2 cup of softened
margarine.
5. Continue to beat the dough for another 10 minutes until it’s formed its shape.
6. Place on a lightly floured surface. It will be very sticky. Shape it into a ball and place it
into a greased bowl.
7. Cover the bowl with plastic wrap and keep in a warm place for one hour.
8. Form the dough into a log and divide it into eight equal pieces.
9. Shape each piece into a ball and stuff it with the cubed cheese, place it on a baking
sheet lined with parchment paper to proof. This should take about 30 to 50 minutes.
10. Brush each bun with egg wash and bake at 170’C for 25-30 minutes or until they are
golden brown.
11. Now do the cheese pull!

Fluffy cheese brioche: how to make it moist and delicious!
You only need a few steps to make an incredible savory brioche:INGREDIENTS
1 egg, separated;
1 package (7 g) yeast;
1 tsp salt;
30g (2 tbsp) sugar;
400ml (1 ¾ cup) milk;
80ml (⅓ cup) vegetable oil;
560g (4 ½ cup) flour;
200g (1 cup) feta cheese;
100 g (½ cup) sharp cheese, shredded;
½ cup chopped greens (parsley, dill, scallions).
Sesame and poppy seeds
METHOD
Whisk egg whites with warm milk, sugar, salt, yeast and vegetable oil.
Make a well in the middle of a bowl of flour. Pour liquids into it and mix to combine. Knead for a smooth dough (around 10 minutes), then place it into an oiled bowl, cover with plastic and set aside for 1 hour.
Mix cheeses with greens.
Cut the dough into 8 parts and roll each one into a circle.
Place a heaping tablespoon of cheese filling in the middle of the dough, pinch edges together to form a triangle.
Place triangles seam side down into a round baking pan and set aside to rise for 1 more hour.
Brush brioche with leftover egg yolk. You can optionally decorate it with poppy seeds and sesame seeds.
Bake for 190C/375F for 40-45 minutes.

How To Make Strawberry & Cream Cheese Brioche Loaf
This week I went a little wild on the baking. Made a strawberry & cream cheese brioche loaf. Then turned it into french toast by stuffing it with more cream cheese & strawberry jam. The loaf could of maybe done a little more time in the oven before taking out of the oven, but ill adjust the timings in the recipe. Overall still an awesome dish :). Tangzhong
90ml/6tbsp x Milk
30g/1/4 Cup x Plain/All purpose flour
1 Pinch x Natural sea salt
Brioche (Recipe from my burgers )
125ml/1/2 Cup x Milk (35c/95f)
60g/1/4 Cup x Caster/Fine granulated sugar
3 tsp x Dried active yeast
500g/4 Cups x Strong/Bread flour
Tangzhong paste
3 x Eggs (Room temperature)
1 Pinch x Natural sea salt
113g/1/2 Cup x Unsalted butter (Soft)
Strawberry Jam
453/1lb x Fresh strawberries (Cut into quarters and the tops removed)
200g/1 Cup x Caster/Fine granulated sugar
1 tsp x Lemon juice
Creme Cheese
227g/8oz x Cream cheese
3 tbsp x Icing/Powdered sugar
1/2 tsp x Vanilla extract
French Toast Egg Mix
2 x Eggs
200ml/1 Cup x Milk
1 tsp x Vanilla extract
Butter (For the french toast & brioche)
50g/1/4 Cup x Unsalted butter (Melted)
Cooking Times
Brioche - 40 minutes then additional 5 minutes out of the tin 160c/350f
