These homemade Cheddar Biscuits are so delightfully flakey and come together in only a few quick steps! They’re so easy to make from scratch but so delicious, and you only need a few ingredients. They’re so cheesy and make for the perfect addition to any meal. You won’t believe how easy it is to make these cheddar biscuits from scratch. Ingredients:
140 gm (1 cup) whole wheat flour
100 gm (1/2 cup) butter
200 gm (1 1/2 cups packed) cheddar cheese, grated
1/2 tsp cayenne pepper or red chilli powder or paprika powder
1 tsp salt
Method:
- In a large bowl, with the help of a hand held mixer blend the butter and cheese until smooth. In another bowl mix in the flour salt and chilli powder.
- Stir the dry ingredients into the butter and cheese and mix well with your hands until the dough comes together.
- Alternatively, cut chilled butter and cheddar cheese into cubes and process in a food processor fitted with a metal blade. put in the dry ingredients and process again until you you have a smooth dough. Do not over process the dough.
- Form the dough into a ball and knead briefly for a minute or two and then divide into 2 equal halves. Roll the dough into a log and wrap with baking parchment or grease proof paper. Twist the ends to seal it (like a toffee wrapper).
- Chill the logs for 3 to 4 hours in the refrigerator. If you are in a hurry, put the logs in the freezer for about 30 minutes. This makes it easier to cut into slices.
- Unwrap the chilled dough. Cut into 1/4” slices. Place them on a baking sheet covered with parchment or grease proof paper.
- Bake in a preheated oven at 200 degrees centigrade (400 F) for 10 to 12 minutes or until browned at the edges. If you have cut your slices very thin, it could be done in 8 minutes.
Note: Depending on your oven and your preference the baking time for these could vary from 8 to 12 minutes. I like my wafers crispy and browned and bake it for longer, more like 10 minutes.

North Carolina Cheese Biscuits___
8 oz sharp cheddar cheese
3½ cups flour
1 Tbsp sugar
1 Tbsp baking powder
½ tsp baking soda
1 tsp salt
4 Tbsp butter, chilled and cut into small pieces
1½ cups buttermilk
2 Tbsp melted butter
• Preheat oven to 500°.
• Prepare a light colored, 9” round cake pan with butter, shortening or cooking spray.
• Squeeze a third cup of cheese into a round ball. Repeat with remaining cheese to make 6 balls.
• In a food processor, combine 2½ cups of the flour, sugar, baking powder, baking soda, and salt. Add the butter and pulse until mixture resembles cornmeal.
• Dump the flour mixture into a large bowl. Stir in buttermilk until just combined. The dough will be wet and lumpy.
• Spread the remaining cup of flour onto a baking sheet. Using a greased half cup, transfer 6 portions of the dough onto the flour. Dust each with flour.
• Flatten one dough ball to a 3-4” circle. Place a cheese ball in the center and pull the dough over it. Pinch off the top to seal in the cheese. Place in the center of the prepared pan.
• Make the other 5 biscuits and place around the first.
• Brush the tops with melted butter. Bake at 500° for 5 minutes, then reduce heat to 450° and bake another 15-20 minutes until golden brown.
• Let cool in the pan for a few minutes, then remove from the pan. Serve warm.
