Ingredients: 4 bundles of fresh Kolo Mee or Wanton Mee noodles (I got mine from here: handpicked.sg) 1 cup Chye Sim, cut into sections 1 cup beansprouts 300g minced pork 50g brown sugar Drizzle of dark soy sauce 1 teaspoon Chinese rice wine 2 teaspoons oyster sauce 3 drops of liquid smoke (optional) 2 teaspoons miso paste 1/4 teaspoon five spice powder 6 tablespoons lard or vegetable oil 6 tablespoons fried shallots
For each bowl of noodles: 1-2 teaspoons light soy sauce 1/4 teaspoon chicken powder 1 tablespoon prepared shallot oil Dash of ground white pepper

4 tbsp hoisin sauce 4 tbsp brown sugar 3 tbsp water 3 tbsp light soy sauce 2 tbsp oyster sauce 2 tbsp Chinese Shaoxing wine 2 tbsp honey – golden syrup 1 tbsp oil 1 tbsp gochujang 1 tsp garlic powder ½ – 1 tsp Chinese 5-spice powder ¼ tsp red food colour or 1 tbsp beetroot powder
optional 1 tbsp corn starch mixed with the water if cooking the ingredients for a thick sauce paste
