How To make Carrot Date Nut Bread
-JUDI M. PHELPS 1 1/2 c Carrots -- peeled and sliced
-about 5 or 6 1 Orange -- remove seeds and
-cut in small pieces 1/4 c Buttermilk
3 c Flour
2 ts Baking soda
1 t Baking powder
1 t Cinnamon
1/2 ts Nutmeg
1 t Salt
2 lg Eggs
1 1/4 c Sugar
3/4 c Vegetable oil
1 c Pitted dates
slivered
1 c Walnuts :
coarsely chopped
Put carrots in heavy saucepan with 1 cup water and 1/2 teaspoon each salt and sugar. Cover and simmer until tender, 25 to 30 minutes. Drain, if all moisture has not evaporated. Put orange, buttermilk, and carrots in blender. Whirl until pureed. You should have about 2 cups of puree. Sift flour with dry ingredients except sugar. In mixing bowl, beat eggs and beat in sugar, oil and carrot puree. Stir in dry mixture and mix until well blended but do not beat. Stir in dates and nuts. Spread in 2 greased and floured small loaf pans (about 8-1/2 x 4-1/2 x 2-1/2 inches). Bake at 350 degrees F. 45 minutes to 1 hour, or until pick inserted near center comes out clean. Remove from pans to wire racks. Cool overnight before cutting. Makes 2 loaves. Source: The Zucchini and Carrot Book by Ruth Conrad Bateman. In this video I am sharing with you all how to make a healthy, eggless, wholewheat dates and walnut loaf cake that has no added refined sugar or butter yet is a super soft, moist and yummy cake.
Eggless Dates and Walnut Loaf Cake is what I call a surprise cake!!
You know why??
A. It does not have any added sugar to it, yet perfect sweetened enough for a tea time cake.
B. This Eggless Dates and Walnut Cake is super soft, even though there are no eggs in it. (obviously, thats why its termed Eggless right.. ;) stupid me)
C. Surprisingly moist cake. all thanks to dates.
D. A crumbly and nutty cake
E. Another element of surprise is that it hardly takes any preparation time. If you exclude the soaking part then it just needs 10 mins of your active mixing time that's it. Bake and enjoy.
Perfect for back to school and one of the best way to introduce dates and nuts in your kids diet.
Plus this hardly takes any time to make. Thats the best part.

How to Make Date Walnut Loaf Cake
A lovely moist cake packed with sweet dates and crunchy chopped walnuts.
INGREDIENTS
1 egg
3/4 cup sugar
1/2 tsp vanilla
1/2 cup oil
1/2 cup milk
1 1/2 cup plain flour
1/2 tbsp cinnamon
2 tsp baking powder
1/4 tsp salt
1 tbsp instant coffee
1 cup chopped dates
1/2 cup chopped walnuts
Bake for 45-55 minutes at 350° F.

Carrot, date & walnut loaf
Serves 12 Prep 25 mins (+ cooling, 10 mins soaking & 10 mins standing time)
Cooking 50 mins
1 cup (140g) dried dates, coarsely chopped
½ cup (125ml) boiling water
½ tsp bicarbonate of soda
2 Coles Brand Australian Free Range Eggs
½ cup (125ml) vegetable oil
2 cups (300g) self-raising flour
1 cup (220g) brown sugar
1½ cups coarsely grated carrot (about 3 large carrots)
½ cup (50g) coarsely chopped walnuts
1 tsp ground cinnamon
½ tsp ground nutmeg
250g cream cheese, softened
50g butter
½ cup (80g) icing sugar mixture
Red, yellow & green liquid food colouring
1. Preheat oven to 180°C. Grease and line the base and sides of a 10cm x 20cm (base measurement) loaf pan with baking paper, allowing the 2 long sides to overhang.
2. Combine the date, water and bicarbonate of soda in a medium heatproof bowl. Set aside for 10 mins to soak. Add the eggs and oil and whisk to combine.
3. Combine the flour, sugar, carrot, walnut, cinnamon and nutmeg in a bowl. Stir in the date mixture. Spoon into the prepared pan and smooth the surface. Bake for 50 mins or until a skewer inserted into the centre comes out clean. Set aside in the pan for 10 mins to cool slightly before transferring to a wire rack to cool completely.
4. Use an electric mixer to beat the cream cheese and butter in a bowl until smooth and creamy. Add icing sugar. Beat until well combined. Reserve ¼ cup of the icing. Spread remaining icing over top of cake.
5. Divide reserved icing between 2 bowls. Add red and yellow colouring to 1 portion to make orange icing. Tint remaining icing portion with green colouring. Place the orange icing in a piping bag fitted with a 2mm nozzle. Pipe 1cm-long carrot shapes on top of cake. Place the green icing in a clean piping bag fitted with a 2mm nozzle. Pipe onto cake to make the carrot tops.
6. Cut into slices to serve.
