Caramel Apple Pie
RECIPE COURTESY OF REE DRUMMOND
Level: Intermediate
Total: 2 hr 25 min (includes chilling time)
Active: 1 hr
Yield: 8 servings
Ingredients
Perfect Spiced Pie Crust:
3 cups all-purpose flour, plus more for flouring
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 1/2 sticks (12 tablespoons) salted butter, cut into pieces
3/4 cup vegetable shortening or lard
1 tablespoon distilled white vinegar
1 egg, lightly beaten
Pie Filling:
6 to 7 cups peeled and sliced Granny Smith apples
1/2 lemon, juiced
1/2 cup granulated sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
Crumb Topping:
1 1/2 sticks (12 tablespoons) unsalted butter
1/2 cup all-purpose flour
1 cup packed brown sugar
1/2 cup quick oats
1/4 teaspoon salt
1/2 cup pecans, chopped
1/2 jar (or more) caramel topping
Directions
Special equipment: a pastry cutter
For the perfect spiced pie crust: Mix the flour, cinnamon, salt and nutmeg in a bowl. Add the butter and vegetable shortening. Work the butter into the flour using a pastry cutter until the mixture resembles tiny pebbles. Add the white vinegar, egg and 5 tablespoons cold water and stir until just combined.
Form 2 equal-sized balls. Place each in a large plastic bag (do not seal) and slightly flatten with a rolling pin; this makes it much easier to roll out the crust later. After flattening, seal the bag tightly. Place in the freezer for 15 to 20 minutes to chill.
Preheat the oven to 375 degrees F.
Remove 1 bag of dough from the freezer (save the other dough for another use), remove the dough from the bag and place it on a lightly floured surface. Roll the dough starting at the center and working outward. Be gentle and patient; it'll take a little time to get the dough completely rolled out. If you think the bottom is really sticking to the surface below while rolling, use a metal spatula to loosen it. When fully rolled out, loosen again with a spatula and lift the pie crust into a 9-inch pie pan (or you can roll the pastry over the rolling pin, lift it onto the pie pan and unroll it). Gently press the dough against the corner of the pan and tear off any excess dough. Then tuck under the edges and go around the pie pan pinching the dough to crimp the edge.
For the pie filling: In a bowl, mix the apples, lemon juice, granulated sugar, flour and salt. Set aside.
For the crumb topping: Cut the butter into the flour with a pastry cutter, then add in the brown sugar, oats and salt.
Add the apples to the prepared pie shell and top with the crumb topping. Bake for 1 hour, covering the edge of the crust with foil if it starts to brown too quickly. After an hour, sprinkle the chopped pecans over the pie, then bake for a further 5 minutes.
Remove the pie from the oven and pour 1/2 jar (or more, if you're feeling dangerous and naughty) of caramel topping over the top. Allow to cool slightly before serving — or don't if you can't wait!
Cook’s Note
This recipe makes 2 crusts, but only 1 is used for the pie. Freeze the other crust until you need it, then thaw for about 20 minutes before using.

Caramel Pecan Pie Recipe
Caramel Pecan Pie Recipe | | This Caramel Pecan Pie is not only absolutely delicious, but so simple to make you'll be enjoying it year round. What what makes this pie stand above the rest? For me, it's the great flavor without the excessive sweetness that you find with most pecan pies. The filling is made with brown sugar and caramel bits that give it a smooth texture without that sickly sweetness that you get from corn syrup. Add that to a flaky crust and you have an amazing pie that everyone will want seconds of.
Caramel Pecan Pie Recipe:
Pie Dough Ingredients:
⚆ 1 single prepared pie crust
⚆ 1 whole egg
Pecan Pie Filling Ingredients:
⚆ 1 cup caramel
⚆ ¼ cup butter
⚆ ¼ cup milk
⚆ ½ cup brown sugar
⚆ 3 whole eggs room temperature
⚆ ½ tsp vanilla extract
⚆ ¼ tsp salt
⚆ 1½ cup pecan halves
Pie Crust Instructions:
⚆ Roll out your pie dough and transfer to your standard sized pie pan, crimping the edges. Whisk together 2 tsp water and 1 egg in a small bowl. Lightly brush mixture on the pie dough, including the bottom and sides where the filling will go. This will help seal the dough so it doesn't get soggy during baking. Refrigerate for 15-20 minutes while you are making the filling.
Pecan Pie Filling Instructions:
⚆ Preheat oven to 350°F. Place pecans on a rimmed baking sheet in a single layer and bake for 5-6 minutes until the pecans are lightly toasted. Set aside to cool.
⚆ In a saucepan over low heat, combine caramels, butter and milk, then stir frequently until smooth. Remove from heat and set aside.
⚆ In a large bowl, beat sugar, eggs, vanilla and salt together until it's about doubled in size. Gradually mix in the melted caramel mixture (make sure mixture has slightly cooled, about 5 minutes, so you aren't cooking the eggs). Stir in pecans and pour filling into prepared pie crust.
⚆ Bake in the preheated oven for 45-55 minutes, or until pastry is golden brown and the filling has set. Allow to cool until filling is firm. Enjoy!

Reserve the One Top:
CARAMEL ROSE APPLE PIE
Servings: 6
INGREDIENTS
4 apples
½ cup sugar
½ cup brown sugar
¼ teaspoon cinnamon
¼ teaspoon nutmeg
1 pie dough
¼ cup heavy cream
PREPARATION
1. Preheat oven to 375˚F (190°C).
2. Peel the apples and cut in quarters. Soak the apples in lemon water to prevent the apples from browning. Slice the apples into thin slices.
3. In a small bowl, combine sugar, brown sugar, cinnamon and nutmeg and stir to combine.
4. Sprinkle sugar and spice mixture over sliced apples and let sit for 30 minutes.
5. Line a pie dough in a cast iron pan, and prick the dough with a fork all around.
6. Drain the apples, squeezing them with your hands to remove the excess moisture. Reserve the liquid to make caramel sauce.
7. Line the apple slices in the cast iron pan by overlapping each slices, to make look like a rose. For the center, roll up one apple slice tightly and place it in the center of the tart, creating a rose bud shape.
8. Cover the pan with a piece of aluminum foil and bake for 30 minutes. Uncover the foil and bake for 10 minutes, or until golden brown.
9. In a saucepan, bring the leftover liquid from apple to a boil. 10.Once the liquid is reduced by half, add the heavy cream and stir well.
11. Pour caramel sauce over to the apple pie.
12. Enjoy!
