Historical Baking: Episode 3 - German Cakes and How to be a 1860s Housewife

Original Recipe:
393. German Cake
Three-quarters of a pound of butter,
One pound and a half of sugar,
Four eggs,
Two pounds of Flour,
One tea spoonful of nutmeg,
Half a wine glass of rose-water,
One pound of dried currants
Beat the butter and sugar together. Whisk the eggs, and add with the other ingredients. Roll out the dough in sheets, cut them in cakes with a tin cutter or the top of a tumbler. Bake in a moderate oven.
Modern Recipe:
1 1/2 stick (170 g) Butter, softened
1.5 cups (340 g) Sugar
2 Eggs (100g) whisked
1/2 tsp Salt
4 cups (700g) all purpose flour
1/2 tsp nutmeg
1/2 cup rosewater
1/2 lb (225g) currants
Preheat the oven to 350. Mix the butter, sugar, and salt until fully combined. Add the eggs and rosewater and mix until fully combined. Add flour, nutmeg, and currants and mix until a smooth dough. Roll out to about 1/3 inch (1 cm) thickness, cut into circles with a cookie cutter or glass, about 3 inches. Bake for 11-13 minutes.
