Simple Finnish Blueberry Pie Recipe (in caption) #shorts
???? If you have frozen billberries (or freshly picked blueberries), you’re only an hour away... Here’s how to bake this Finnish blueberry pie, make sure to save this recipe! ⬇️
For the crust
125 g softened butter (voi)
1 dl granulated sugar (taloussokeri)
1 egg (muna)
0,5 dl flaked oats (kaurahiutaleet)
3 dl all-purpose baking flour (puolikarkea vehnäjauho)
1 tsp baking powder (leivinjauhe)
1/2 tsp salt (suola)
100 g Finnish sour cream (kermaviili)
On top
2-3 dl bill/blueberries (mustikat)
1 tbsp potato starch, especially if the blueberries are frozen (perunajauho)2 tbsp granulated sugar (taloussokeri)
Vanilla ice-cream or vanilla sauce (vaniljajäätelö or vaniljakastike)
????American Measurements, roughly????
1 stick of softened butter
0.4 cups granulated sugar
1 egg
3 tbsp oats
1.3 cups all-purpose baking flour
1 tsp baking powder
1/2 tsp salt
100 g Finnish sour cream
On top
1 cup bill/blueberries
1 tbsp potato starch especially if blueberries are frozen
2 tbsp granulated sugar
Vanilla ice-cream

Preheat oven to 440°F/225°C. Butter a pie plate (around 10 inches / 26 cm).
Mix the butter and sugar together in a bowl. Add the egg in and mix again.
Put flour, flaked oats, baking powder and salt in a separate cup and mix. Then add them in the bowl and mix quickly so that all is even. Last, whisk in the sour cream.
You now have a super sticky dough, awesome! Just scrape the dough onto to pie plate. Make the dough somewhat even base for the blueberries. Mix blueberries with starch and sugar. Put on top of the dough.
(You really need starch when you use frozen or defrosted blueberries because they have a lot of water inside them.)
Bake the pie for 25 minutes or until golden brown. Serve with vanilla sauce or vanilla ice cream. Blueberry pie is definitely most delicious immediately after baking!????

No Bake Blueberry Cream Pie with Graham Cracker Crust is a taste of summer you won't forget. Best served chilled, this pie filling is rich, creamy, and fruity with just the right amount of sweetness. The graham cracker crust is classic and one you can repurpose for other no bake desserts like my other favorite, cheesecake!

:::ingredients
--------Graham cracker crust
1 cup graham cracker crumbs ground in a food processor
5 1/2 Tablespoons unsalted butter melted
3 tablespoons sugar
--------Blueberry filling
2 1/2 cups blueberries i used frozen
2 teaspoons cornstarch
2-3 tablespoons sugar adjust sweetness while cooking, 1 Tbsp at a time to taste.
--------Cream Topping
2/3 cup mascarpone cheese
2/3 cup Greek yogurt I used Greek Gods Whole Milk
2 tablespoons sugar
--------Blueberry topping
1 cup Fresh blueberries for garnish
whipped cream optional
INSTRUCTIONS
--------Graham cracker crust
Spray the bottom and sides of pie tin or glass pie dish with nonstick spray. Using your hands, mix crust ingredients in a medium bowl.
Pack onto pie dish in an even layer and press firmly. Chill until firm, at least 45 minutes.
--------Blueberry Filling
Use a small saucepan on medium heat, add blueberries, cornstarch and sugar. Bring to a simmer and stir occasionally.
Cook about 6 minutes until thickened. Set aside and allow to cool. (For quicker cooling set in a metal container and place in an ice bath!)
--------Cream Topping
Meanwhile, combine mascarpone cheese, yogurt and 2 tablespoons sugar. Beat with electric mixer until smooth and set aside.
--------Assembly
Take out your pie crust from the refrigerator and spread with the cooled blueberry mixture. Spread evenly using a spoon or spatula.
Top the blueberry mixture with the cheese yogurt mixture in an even layer. Top with fresh blueberries.
Chill until set, about 5 hours. Remember to share and serve with additional whipped cream!

300g cream cheese
1/2 cup icing sugar (100g)
