How To make Black Pasta
3 1/2 Cups unbleached all-purpose flour -- plus 1/2 C
4 extra large eggs
1/2 Teaspoon olive oil
1 Ounce squid ink
available in speciality food shops
Make a mound of the flour in the center of a large wooden cutting board. Make a well in the middle of the flour and add the eggs, oil and squid ink. Using a fork, beat together the eggs, oil and squid ink and begin to incorporate the flour starting with the inner rim of the well.
As you expand the well, keep pushing the flour up to retain the well shape. Do not worry that this initial phase looks messy. The dough will come together when 1/2 of the flour is incorporated.
Start kneading the dough with both hands, using the palms of your hands primarily.
Once you have a cohesive mass, remove the dough from the board and scrap up any left over crusty bits. Lightly flour the board and continue kneading for 3 more minutes, the dough should be elastic and a little sticky. Continue to knead for another 3 minutes, remembering to dust your board when necessary. Wrap the dough in plastic and allow to rest for 30 minutes at room temperature. Note: do not skip the kneading or resting portion of this recipe, they are essential for a light pasta.

In this video, I am going to show you how to make an incredibly fragrant and rich seafood sauce for pasta using fresh clams, calamari, and shrimp. The key is to use black pasta made with squid ink. This authentic Italian recipe adds depth of flavor to your typical seafood sauce!

Prep Time: 20 minutes
Cook Time: 35 minutes
Serves 4 as a first course
320 grams of pasta made with squid ink
2 pounds of clams
1 pound of unpeeled shrimp
1 pound of cleaned calamari
300 grams of cherry tomatoes
2 tablespoons of tomato paste
1 clove of garlic
Zest of a half lemon
½ cup of white wine
¼ cup of chopped fresh parsley
2 sprigs of basil
2 tablespoons of extra virgin olive oil
Preparation:
Wash the clams in cold water to remove any sand from the outside. An optional step is to soak them in salt water for a few hours so they can purge the sand inside. Otherwise, just put the clams into a sauce pot over medium heat and cover. Let them steam open and release their liquid. Once the clams have all opened then strain the juice and set aside. Make sure to discard any clams that didn’t open.
Peel the shrimp and set the shells aside. In a small sauce pot, toast the shells in olive oil over medium heat with the zest of half a lemon. Cover with water and simmer for 5 minutes. Strain the shells and reserve the broth.
In a sautee pan, add garlic and chopped parsley stems with some extra virgin olive oil. Heat the pan slowly over medium heat. Once the garlic is sizzling add the cherry tomatoes. Once the tomatoes start to wilt, add the tomato paste and stir into the sauce, cooking it for about 20 seconds. Salt the tomatoes to taste and toss in the basil. Then add the white wine and reduce until it resembles a syrup.
At this point, add the calamari and shrimp along with the shelled clams if you decide to remove the meat. Toss for less than 30 seconds and add the broth making sure to not use the sandy bit at the bottom.
In the meantime, take a ladle or two of the pasta cooking water when the pasta is a minute away from being al dente and add it to the sauce. Strain the pasta and add it to the saute pan. Toss to coat and finish the cooking of the pasta for the remaining minute until al dente. Add chopped parsley and a drizzle of good olive oil. Serve immediately.
