Hazelnut Truffles

Ingredients
1 cup hazelnuts
3 1/2 ounces good bittersweet chocolate
3 1/2 ounces good semisweet chocolate
1/2 cup heavy cream
1 1/2 tablespoons hazelnut liqueur (recommended: Frangelico)
1 tablespoon prepared coffee
1/2 teaspoon good vanilla extract
Directions
Preheat the oven to 325 degrees F.
Chop the hazelnuts and place them on a sheet pan. Roast them in the oven for 10 minutes. (If the hazelnuts have skin on them, roast them for 25 minutes.) Set aside to cool.
Chop the chocolates finely and place in a bowl.
Heat the cream in a small saucepan until it boils. Immediately pour the hot cream through a fine-meshed sieve into the bowl with the chocolates. With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. (If the chocolate doesn't melt completely, place the bowl over a pan of simmering water and stir for a few minutes just until it melts.) Whisk in the hazelnut liqueur, coffee, and vanilla. Cover and chill for 45 minutes to 1 hour until pliable but firm enough to scoop.
With 2 teaspoons or a 1 1/4-inch ice cream scoop, make dollops of the chocolate mixture and place on a baking sheet lined with parchment paper. Refrigerate for about 15 minutes, until firm enough to roll into rough spheres. Roll the chocolate in the chopped hazelnuts and chill again. Truffles are best when they're allowed to set overnight in the refrigerator.

Remove from heat. Add the chocolate and stir until melted and mixture is smooth. Add the liqueur, vanilla and salt. Pour into a shallow bowl and let stand for 15 minutes. Cover with plastic wrap and refrigerate until firm, at least 2 hours and up to one week. Place cocoa in a small bowl. Using a 2 teaspoons. cookie scoop or melon ball 1 inch enough chocolate to make a chocolate truffles ball an inch. Roll the ball in cocoa, shake off excess, and place it in an airtight container. Repeat with remaining chocolate, place wax paper between each layer truffles. Refrigerate up to three days. Serve chocolate truffles at room temperature. To change added: roll finely chopped nuts, grated coconut, caramel crushed or powdered sugar. Makes 50 chocolate truffles.

Ingredients:
2/3 cup heavy cream
1 (4 ounce) bar semisweet chocolate, finely chopped
1 (4 ounce) bar bittersweet chocolate, finely chopped
1 tablespoon unsalted butter, softened
1/2 teaspoon vanilla extract
1/8 teaspoon fine sea salt
Coatings:
1 (0.81 ounce) package freeze-dried strawberries
10 starlight hard peppermint candies
1/4 cup unsweetened cocoa powder
1/4 cup powdered peanut butter (such as PB2®)
Directions:
1. Heat cream in a small saucepan over medium until steaming, about 5 minutes.
2. Meanwhile, combine semisweet and bittersweet chocolate with butter in a medium bowl. Pour hot cream over chocolate and let stand for 1 minute. Stir until melted and smooth. Stir in vanilla and salt. Pour into a shallow dish, such as a pie plate, cover, and refrigerate until ganache is scoopable, about 30 minutes.
3. Place strawberries in a mini food processor and pulse until finely chopped but not powdered, about eight 1-second pulses. Place in a small bowl.
4. Place mints in a zip-top bag and whack with a mallet about 5 times until coarsely crushed. Transfer to a separate small bowl. Place cocoa powder and powdered peanut butter in small bowls.
5. Scoop tablespoonfuls of ganache and roll into balls; your hands will warm up the ganache if it got too firm. Place on a parchment-lined plate.
6. Roll 3 truffles in each coating, pressing to adhere. Chill until ready to serve.

Ingredients we tried:
1 oz unsalted butter (30g)
8 oz bittersweet chocolate (200g)
4 oz hazelnuts, chopped (100g)
4 oz white chocolate (100g)
Instructions:
In a saucepan, melt butter and chocolate. When melted, stir in hazelnuts.
Place the mixture into a piping bag and fill paper cups with it.
Refrigerate for 30 minutes.
Melt white chocolate and place into a piping bag. Drizzle truffles with white chocolate and garnish with a piece of hazelnut.
