How To make Best In The West (Houston) Pumpkin Pie
3 Eggs
16 oz Solid pack pumkpin; canned
1/2 c Packed brown sugar
1/2 c Sugar
1 1/4 ts Cinnamon
1/2 ts Ground ginger
1/4 ts Nutmeg
1/2 ts Salt
3/4 c Milk
1/2 c Whipping cream
9 inch pie shell; unbaked
Whipped cream In large bowl, beat eggs slightly. Add pumpkin, sugar(s), cinnamon, ginger, nutmeg and salt and mix well. Add milk and cream and mix well. Place pie shell on oven rack, then pour in pumpkin filling. Bake 60 to 70 minutes at 350 degrees. Cool on a rack. Just before serving, decorate with whipped topping. Several years ago, I clipped this recipe from the Houston Chronicle. Since then I have shared this recipe with friends and neighbors and all agree, this is the best pumpkin pie ever! This recipe is the best low carb pumpkin pie and is a perfect thanksgiving dessert for the autumn season. The pumpkin filling made dairy free and uses a gluten free almond flour crust which makes it the perfect guilt free pumpkin dessert.

► Pumpkin Pie
15 oz pumpkin (Canned or Homemade)
12 oz evaporated almond milk
3 eggs
1 cup sukrin gold
1 tbsp almond flour
1/2 tsp salt
homemade pumpkin pie spice
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/8 tsp ground cloves
9 in homemade almond flour pie crust
► Directions
Preheat Oven to 400 F
Add pumpkin, milk, eggs, flour, salt, pumpkin spice, and sukrin gold together and blend it up smooth
Add pumpkin puree to 9 in almond flour crust
Cover ends of crust with foil to avoid burning
Bake in oven for 45 - 50 minutes
Cool down for 2 hours
Serve and Enjoy!
