Hello my beautiful anti aging friends..Take a great salad to a picnic or make it for your family...Hope you enjoy!!
Recipe:
1 Cup of Barley ( or any whole grain of your choice)
2 cans (15oz) of Northern Beans ( rinsed well)
2 cans (15oz) of Garbanzo Beans ( rinsed well)
1/2 green pepper diced small
1/2 red pepper diced small
1/2 bunch of green onions diced ( green part only)
7 Sundried tomatoes chopped ( about a 1/2 cup)
1/3 cup of Pesto ( your favorite)
1/3 cup of white wine vinegar ( do not use plain white, red or balsamic)
2 Tablespoon of Extra Virgin Olive Oil
3 Tablespoon of chopped FLAT ITALIAN parsley
Pepper to taste
Blend the pesto, vinegar and olive oil in a container...whisk, set aside
Combine all other ingredients ...stir....add pesto vinegar oil dressing....ENJOY!!

I am having a very lazy weekend (hence this video is being posted a day late-ha!) so, decided to pick up ribs, chicken and brisket from a local bbq joint. And since I didn't have to hang out at the grill for a few hours, I decided to make two sides that will be great for the holiday or any day this summer--Jamaica Cole Slaw and Sun-dried Tomato Orzo Pasta Salad.
These two salads are perfect contrasts to the richness of bbq.
No recipes because I freestyled them--like I said, a lazy kinda day! ;-)
