How To make Artichoke Bottoms with Bay Scallops
3/4 lb Scallops, bay, washed
1 c Bread crumbs, fresh, fine
3 tb Parsley, fresh, minced
1/2 ts Tarragon, dried
1/4 c Celery, minced
2 Garlic, cloves, minced
28 oz Artichoke bottoms, drained
(2-14 oz cans) Oil, canola, for brushing On grill rack Mix scallops, bread crumbs, parsley, tarragon, celery and garlic in a bowl. Gently mound filling into artichoke bottoms. Prepare grill. When coals are hot, set artichokes on grill rack, brushed with oil, about 4 to 6 inches from heat source. Cover grill. Cook stuffed artichokes for about 3 minutes or until scallops are opaque. Using a long-handled spatula, transfer artichoke bottoms to serving dish. Serve hot.

Mind Blown Crab-Stuffed Artichoke Bottoms
Serve these Mind Blown™ Crab-Stuffed Artichoke Bottoms with a crisp glass of white wine or champagne to help ring in the New Year!
Ingredients:
1 Box Mind Blown™ Crab Cakes (2 cakes total)
3 cans (14-ounce each) artichoke bottoms - (approximately 18), drained and patted dry
3 Tbsp. chopped green onion
1 tsp. minced garlic
1 Tbsp. chopped jalapeño
1 Tbsp. lemon juice
1/2 C plant based mayonnaise
1/2 C plant based sour cream
1 C plant based cream cheese, softened
1 Tbsp. Old Bay seasoning
1/4 C crackers of choice, crushed
3 tablespoons chopped fresh parsley - plus more for garnish
Salt and pepper to taste
Cooking spray
Directions:
1) Place Mind Blown™ Crab Cakes in a bowl to thaw in the fridge overnight; the next day, crumble the crab cake with a fork to make crab 'meat'; set aside.
2) Preheat oven to 375 degrees. Spray a baking sheet with cooking spray.
3) Rinse and drain the cans of artichoke bottoms and pat dry with a paper towel.
4) In a bowl, combine the crab 'meat' along with the: plant based sour cream, mayo, cream cheese, green onion, garlic, jalapeño, lemon juice, Old Bay seasoning, and season to taste with salt and black pepper. Stir to combine; set aside.
5) Place artichoke bottoms on the sprayed baking sheet. Fill the artichoke bottoms with equal amounts of the crab filling.
6) Crush the crackers until you have 1/4 Cup of coarse crumbs; Sprinkle on top of the top of the crab-stuffed artichoke bottoms.
7) Bake for 20 minutes or until thoroughly heated through. Serve immediately and enjoy!

Ingredients:
4 large artichokes
1 1/2 Lbs cooked seafood
2 Tbsp olive oil
1/4 large yellow onion
1 stalk celery
1/4 red bell pepper
1 oz cream cheese
1/4 cup mayonaise
1/2 cup shredded cheese blend
1 tsp old bay seasoning
6 dashes hot sauce
2 Tbsp heavy cream
12 ritz crackers, crushed
1 Tbsp butter, melted
Cook artichokes with 1 cup water on high pressure for 9 minutes, then quick release.
Scoop out inner leaves and fuzz.
For filling use precooked seafood or cook as needed. To cook scallops, dry with paper towels, season with salt and pepper, Sautee in skiller with 2 Tbsp olive oil until brown on each side. Add 1 Tbsp butter before removing from pan.
Cook onion, celery, and bell pepper in 2 Tbsp olive oil until tender. Combine in large bowl with rough chopped seafood, cream cheese, mayo, shredded cheese, old bay, hot sauce, heavy cream, and 1/2 crushed crackers. Stuff into artichokes, top with remaining cracker crumbs mixed with melted butter.
