It also contains a healthy dose of sour cream which gives this cake a great texture... Merry Christmas 2021! Candy Cane Cheesecake - Glen And Friends Cooking
Bruno Feldeisen’s Candy Cane Cheesecake
Ingredients:
For the base:
375 mL (1½ cups / ¾ sleeve) ground graham crackers
75 mL (1/3 cup) brown sugar
90 mL (6 Tbsps) butter
2 mL (½ tsp) ground ginger
2 mL (½ tsp) ground cinnamon
For the cheesecake:
625 mL (2½ cups / 2½ pkgs) cream cheese
175 mL (¾ cup) brown sugar
2 large eggs
125 mL (½ cup) sour cream
250 mL (1 cup) crushed candy canes
Method:
Preheat the oven to 180°C (350°F).
In a medium bowl, mix by hand the ground graham crackers, light brown sugar, ground cinnamon and the ground ginger.
Add the melted butter and stir until combined.
Transfer the base mixture to a parchment-lined and greased, 8-inch (20-cm) springform pan.
Bake for 15 minutes.
Remove from oven and allow to cool at room temperature.
For the cake:
Lower the oven temperature to 260°F (125°C).
Beat the cream cheese at low speed until soft.
Beat in the brown sugar, eggs and, sour cream.
Beat until the mixture is smooth and lump free.
Fold in the crushed candy canes.
Fill the cake pan and place on a baking sheet.
**Bake for about 35 - 40 minutes at 260°F (125°C).
** This temperature seemed low, and the baking time seemed short to me (Glen), but that's what Bruno insists... I needed to cook almost double the amount of time, and then I left it in the oven (with the oven off) for another hour to cool slowly.

100 Year Old Mississippi Cheese Pie Recipe - Old Cookbook Show
This recipe is called Cheese Pie, and it is the predecessor of a Southern Chess Pie, or Chess Cake Pie -in old cookbooks - all are variations on the same theme with slightly different names that all sound the same. There are lots of theories about the culinary history as to where the name Chess Pie comes from, but really 'Chess' is just a miss-print or miss-hearing of 'Cheese'. Cheese Pie (without cheese) has a long history in English and Scottish community cookbooks back into the early 1700s and earlier - the 'cheese' is a reference to how an acid in the mixture, either a citrus juice or vinegar, curdles the mix (curd). The Cheese name has fallen out of favour and this is often seen in English cookbooks today as 'Lemon Curd'.
Cheese Pie:
Yolks of three eggs and whites of one, three tablespoons melted butter, one cup of sugar, three tablespoons sweet milk, one tablespoon flour, flavor with vanilla or lemon. Bake with under crust to nice brown. Take two remaining whites and two tablespoons sugar, beat till stiff; place on pie and brown slightly.

Canteen Cookies Recipe:
½ c. butter
1½ c. brown sugar
2 tbsp. sour milk
2 eggs
3 c. pastry flour
1 tsp. soda
1 c. seedless raisins
1 c. currants
½ c. walnuts
½ tsp. cinnamon
½ tsp. nutmeg
1 tsp. grated orange peel
Cream shortening with an electric mixer, add sugar, which has been put through a sieve. Add milk and eggs. Sift soda with ½ of the flour & add to above mixture. Then add the fruit & nuts which have been chopped & floured with ½ c. of the remaining flour. sift the spices with the remaining flour & add to the mixture. Drop by teaspoonfuls on greased tins, 1 apart & bake in the electric range oven at 375º for about 15 min.
A word about 'currants' - Currants in the context of baking recipes: there are two completely unrelated things called Currants in English. Whenever a 'British' or Commonwealth baking recipe calls for Currants (and most American recipes for that matter); they are asking for the dried raisin of the Corinthian Grape. These are sometimes called Zante Currants, Zante Raisins or Corinthian Raisins: Go to the grocery store and pick up a bag of dry currants in the baking aisle and read the ingredients / info on the package... They are most likely raisins.
Most people are confusing them with Red or Black currants which are part of the Gooseberry family and almost always eaten or cooked from fresh. Growing Red and Black Currants from the Gooseberry family were banned from the United States in the early 1900s, and since that time they are hard to find.
