Apple Spice Cake and Loaf Recipe: Fall Baking

The Dry Ingredients:
• 2 cups all-purpose flour
• 2 teaspoons ground cinnamon
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¼ teaspoon ground cloves
The Wet Ingredients:
• 4 eggs
• 1 and ½ cups granulated sugar
• 1 cup of vegetable oil
• ½ cup milk
• 2 teaspoons pure vanilla extract
The add-ins:
• ¾ cup chopped walnuts
• ½ cup raisins
• 2 tablespoons all-purpose flour
• 2 Fuji apples, peeled, cored, and finely diced
• ¼ cup light brown sugar
• ½-1 teaspoon ground cinnamon
The topping:
• 1 Fuji apple, cored and thinly sliced
• 2 tablespoons (approximately) granulated sugar
• 2 tablespoons melted butter
Preheat the oven to 350 °F, 180 °C.
Grease 2 (8.5 by 4.25 by 2.75 inches) loaf pans with soft or melted butter and line them with parchment paper.
Combine the wet ingredients in a large mixing bowl and whisk together until smooth.
Combine the dry ingredients in a bowl and whisk together. Sift the dry ingredients into the wet ingredients and whisk until combined.
Combine the raisins, walnuts, and 2 tablespoons of flour in a small bowl and mix together. Fold these into the batter.
For the Apple Spice cake, pour half of the batter into one of the prepared loaf pans. If you’re making two apple spice cakes then, pour the remaining batter in the other loaf pan.
Combine the diced apples, brown sugar, and cinnamon in a bowl and mix together. Add a tablespoon of flour and mix it together. Add the apples to the remaining batter to make the Apple Spice Loaf. Fold the apples into the batter then, pour it into the prepared loaf pan.
Arrange the apple slices over the batter (both pans) then brush them with the melted butter. Sprinkle the granulated sugar on top.
Bake in the center rack of the oven.
The Apple Spice Cake will bake faster than the loaf. Check them at the 40-45-minute mark by inserting a toothpick in the center of the cake/loaf. If the toothpick comes out clean, then, they are ready.
The Spice Cake should be ready at 45 minutes.
The Apple Loaf cake, that has the diced apples inside, will take longer. Up to 1 hour and 10 minutes.
Remove from the oven and allow the cakes to cool for 10-15 minutes, inside the loaf pans. Run a knife around the edges and take the cakes out of the pans. Set on serving trays and cool completely.
Dust with some confectioner’s sugar and serve with tea or coffee. Enjoy!
Notes:
Granny Smith apples are too tart for this cake. It is better to use Fuji, Gala, Braeburn, Honeycrisp, or any apples that will not melt that are also sweet. Red delicious apples will turn to applesauce.
The Apple Spice cake (without the apples inside the batter) will bake much faster than the loaf. It will be ready in 40-45 minutes.
The Apple Spice Loaf (full of apples) will take at least an hour, depending on your oven, to bake.
Chop the apples very small so that they bake evenly.

Cake
250 mL (1 cup) butter
3 large eggs
125 mL (½ cup) sugar
125 mL (½ cup) packed brown sugar
Zest of one lemon
375 mL (1½ cups) all-purpose flour
5 mL (1 tsp) baking powder
2 mL (½ tsp) baking soda
2 mL (½ tsp) ground cloves
2 mL (½ tsp) ground nutmeg
2 mL (½ tsp) cinnamon
2 mL (½ tsp) salt
3 peeled, chopped or grated apples
Method:
Preheat oven to 160ºC (325ºF).
Grease a 9 round or 9x9 square cake pan.
Melt butter and cook until browned, remove from heat and set aside.
Beat together the eggs, then whip in the two sugars.
Mix in the lemon zest.
Combine the flour, baking powder, baking soda, cloves, nutmeg, cinnamon, and salt.
Slowly whisk the flour into the batter.
Stir in the apples, and transfer to the cake pan.
Bake for 35-45 minutes or until a cake tester comes out clean.
Crumb topping would be great on this:
Crumb Topping:
125 mL (½ cup) butter
375 mL (1½ cups) all-purpose flour
175 mL (¾ cup) brown sugar, packed
15 mL (1 Tbsp) ground cinnamon
1 mL (¼ tsp) coarse salt
Combine and sprinkle on top of cake before baking.

Moist and Decadent Spice Cakes - Simple and Easy
This moist and decadent cake is one of the nicest I have ever tasted. Believe me, your family and friends will say Where did you buy this cake? They will be shocked, unless they know you're an experienced baker, that you made it from scratch. It is so easy to make, even if you don't have the right spices on hand. Inevitably, I always make this up for the Holidays, and it's always a hit.
The one drawback to this wonderful cake is that it involves quite a few spices. If you don't have them on hand, however, you can always improvise. For example, the recipe calls for allspice, which many people don't have in their spice rack, but you can use a pumpkin spice or simply leave it out. The same applies to many of the spices and the outcome will be equally as good. The spice cake will be, soft, moist, and ever so decadent.
Once you have the cake made, apply the delicious buttercream frosting, which we show you how to make, and the outcome is totally out of this world.

Ingredients:
1/4 tsp of salt
2 tsp of ground ginger
1 tsp of ground cinnamon
1/2 tsp of nutmeg
1/2 tsp of pumpkin spice or all spice
1/2 tsp of ground cloves
2 1/2 cups of all purpose flour
1/4 cup of corn starch
2 tsp of baking powder
1 cup of milk - 2 percent is fine
3 eggs
2 tsp of vanilla extract
1 cup of partially unsalted melted butter - 230 grams
1 1/2 cups of packed brown sugar
1 cup of crushed walnuts or pecans
2 cinnamon stick if desired for decorations
For the Butter Cream Frosting:
2 cups of confectioner's or powdered sugar
1/2 cup of semi melted butter
2 tsp of vanilla extract
1 or 2 tbsp of milk if necessary
Method:
Preheat your oven to 350 degrees F or 177 C.
Add the flour, corn starch, baking powder, and spices to a mixing bowl. Whisk until well combined.
Add the milk, eggs, and vanilla extract to a smaller bowl. Again, whisk until well incorporated.
Mix the dry ingredients and butter over low speed, then change to medium, until a pebbly crumbly mixture forms.
Add in the milk mixture 1/3 at a time while continuing to mix until a smooth mixture forms.
Add in the brown sugar and mix until just combined.
Place the walnuts in and, using a spatula, fold together.
Spray and nine by thirteen baking pan with spray and line the bottom with parchment paper.
Add the cake mixture in and smooth out.
Place in the oven and bake for about 25 minutes or until a toothpick comes out clean.
Remove from the oven and allow to cool.
In the mean time, make the frosting by combining the sugar, vanilla extract, and butter. Mix until smooth and creamy. Add some milk if it's too thick.
After it cools, place a wire rack over the baking tray and flip the cake over onto it.
Cut the cake in half and frost the one side.
Frost the top and spread a few more walnuts over the top. I place a couple of cinnamon sticks on for decorations too.
Slice and enjoy your moist and decadent spice cake.

Spiced Apple Cake

Ingredients
Apples:
Unsalted butter, for buttering the baking pan
6 small Granny Smith apples, peeled and sliced
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
Cake:
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
4 large eggs, at room temperature
2 cups all-purpose flour
1 cup almond flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 1/2 cups buttermilk, at room temperature
3 tablespoons powdered sugar
Directions
For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.
Cook’s Note
For a twist on a classic topping, beat 2 tablespoons store-bought salted caramel with 1/2 cup heavy whipping cream until soft peaks form. Serve dolloped on top.
