How To make Apple Oatmeal Chewies
1 1/2 c Flour
1 c Brown sugar; packed
1/2 c Butter or margarine; soft
1/4 c Sugar
1 ts Cinnamon
1 ts Vanilla extract
3/4 ts Baking soda
2 Eggs
2 c Quick cooking oats; raw
1 c Walnuts or pecans; chopped
1 lg Golden delicious apple
; peeled and diced About 2 hours before serving or early in the day: 1. Preheat oven to 350. Grease 13" by 9" baking pan. Into large bowl,
measure first 8 ingredients and 1/2 teaspoon salt. With mixer at low speed, beat ingredients until well blended, occasionally scraping bowl with rubber spatula. fold in oats, walnuts and apple. Spread dough evenly in pan. 2. Bake 35 minutes or until toothpick inserted in center comes out
clean. Cool in pan on wire rack. Cut lengthwise into 4 strips, then cut each strip crosswise into 5 pieces. Store bars in tightly covered container. -----

Ingredients:
2 Cups Old Fashioned Oats (160g)
3/4 Cup Dried Cranberries (120g)
1/2 Cup Almonds, Chopped (60g)
1/4 Cup Pumpkin & Sunflower Seeds (32g)
1 Teaspoon Cinnamon Powder (2.6g)
1 Ripe Banana
1 1/2 Cups Almond Milk, Unsweetened (360ml)
1 Tablespoon Honey (15ml)
Directions:
1. In a bowl, mix together the oats, cranberries, almonds, seeds, and cinnamon. Set aside. In another larger bowl, mash the banana until smooth. Add the almond milk and honey and whisk together. Fold in the dry ingredients until well combined.
2. Lightly coat an 8 by 11 inch baking dish with cooking spray. Evenly spread the oatmeal into the baking dish. Bake in a preheated oven at 375°F for 30 - 40 minutes or until the top begins to brown.
3. Let cool completely in baking dish. Cut into bars.

Ingredients:
For the crumble:
1 cup (125g) All-purpose flour
1½ cups (135g) Rolled oats
1/2 cup (100g) Light brown sugar
1/2 teaspoon Baking soda
1/2 teaspoon Cinnamon *optional
1/4 teaspoon Salt
1/2 cup (115g) Butter, softened
For the raspberry filling:
300g (10.5oz) Raspberries, fresh or frozen
1 teaspoon Lemon zest
2 tablespoons (25g) Sugar
2 tablespoons (15g) Cornstarch
1 teaspoon Vanilla extract
Directions:
1. Preheat oven to 350F (175C). Line a 8-inch (20cm) square baking pan with a strip of parchment paper. Set aside.
2. Make the crumble: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.
3. Make the filling: in a large bowl mix raspberries, lemon zest, sugar, cornstarch and vanilla extract. Set aside.
4. Press 2/3 of the crumble mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.
5. Bake for 35 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.

Here is a 60 second video of me and my littlie making these apple oat bars. In this video I show you how to make homemade apple sauce too:
Ingredients
1 Cup quick cook oats
1 Cup rolled oats
2 Tbsp chia seeds
1.5 tsp cinnamon
30g coconut oil
1 cup apple purée or applesauce
1 to 2 Tbsp maple syrup (optional - if add more if you want it sweeter)
Bake at 180 Celsius or 356 Fahrenheit for around 20 minutes
Store in the fridge for up to 5 days or in the freezer.
