How To make Apple Butter Oatmeal Bars
Servings: 12
1/2 c Butter Or Margarine;Softened
1/2 c Brown Sugar; Packed
1/2 c Apple Butter
1 ea Egg; Large
2/3 c Flour; Unbleached
1/2 t Baking Soda
1/2 t Baking Powder
1/4 t Salt
1 c Oats; Quick Cooking Rolled
1 c Coconut; Flaked
Cream butter and sugar; blend in apple butter and egg. Stir flour with soda, baking powder and salt; stir into creamed mixture. Stir in oats and coconut. Spread in greased 13 X 9 X 2-inch baking pan. Bake at 350 degrees F. about 20 minuts. If desired, sift powdered sugar over top while still warm; cool. Cut into bars. Makes 8 bars
Ingredients:
2 cups (180g) Rolled oats
1 teaspoon Baking powder
1/2 teaspoon cinnamon
1/4 teaspoon Salt
1/4 cup (35g) Dried cranberries
1/4 cup (35g) Sunflower seeds
1/4 cup (30g) slivered almonds
2 bananas, ripe
1¼ cups (300ml) Almond milk, or any milk of your choice
recipe for homemade almond milk:
3-4 tablespoons maple syrup or honey
2 tablespoons coconut oil
Directions:
1. Preheat oven to 350°F (175°C). Line an 8-inch (20cm) square baking pan with parchment paper, set aside.
2. In a large bowl, mash bananas, add honey and stir. Add milk, coconut oil and whisk to combine.
3. Combine wet and dry ingredients. Stir in almonds, cranberries and sunflower seeds.
4. Pour the batter into prepared baking dish.
